Every baker should know how to make scones. Scones are a versatile dessert to have in your repertoire. You can add a variety of ingredients to flavor them as you see fit. everything from bacon & syrup to dried fruit and even chocolate chips. They are easy to make. Below is a full recipe. The method is easy to follow. Perfect for the beginner baker.

Classic Plain Scones
Classic Plain Scones Recipe
TIMINGS:
Prep Time: 15 mins.
Cook Time: 10 mins.
Total Time: 25 mins.
SERVES:
Makes 12 Scones.
INGREDIENTS:
• 3 ¼ cups (525g/18 oz) self-raising flour (plus extra for dusting).
• 1½ teaspoons baking powder.
• ½ teaspoon salt.
• ½ cup + 3 tbsps (150g/5 oz) butter (frozen and grated).
• ¼ cup + 2 tbsps (75g/2 ½ oz) sugar.
• ½ cup + 1 tbsp (135ml/ 4.5 fl oz) whole milk.
• ½ cup + 1 tbsp (135ml/4.5 fl oz) cream.
• 2 teaspoons lemon juice.
• 2 teaspoons vanilla extract.
• 1 egg (to glaze).
METHOD:
1, Preheat the oven to 220C/200C Fan/430F.
2. Place a lined baking tray in the oven to pre-warm it
3. Pour the milk and cream into a bowl and heat in the microwave until warm, not hot.
4. Place the self-raising flour, baking powder & salt into a large bowl and give everything a mix.
5. Add the grated frozen butter and rub it into the flour until it resembles breadcrumbs.
6. Pour in the lemon juice.
7. Add the vanilla extract to the warm milk/cream and pour it into the scone mixture.
8. Using a spoon or your hands stir until it comes together and forms a ball.
9. Place the dough on a floured work surface and fold the dough a few times while shaping at the same time.
10. Pat down the dough or use a rolling pin to roll to a thickness of 4 cm.
Using a 5cm cutter, dip it in flour and cut out the scones.
11. Remove the warm tray from the oven and place the scones on it.
12. Brush the tops of the scones with the beaten egg making sure not to let it drip down the sides of the scones as this will cause problems with them rising while baking.
13. Bake in a preheated oven for 10-12 minutes or until golden brown.
14. Remove from the oven and allow to cool on a wire rack.
15. Serve with butter, jam, cream, clotted cream.

Devon or Cornish Scones?
What's the difference between a Devon and a Cornish Scone? The answer is really simple. In Devon, they split the scones in two and add the cream first and the jam second. Whereas in Cornwall it's the opposite way around. They split the scones in two and add the jam first and the cream second.
STORAGE:
• The scones will keep in an airtight container for up to 5 days.
• Scones can be kept for up to a month in a freezer.

    Hi again Gosh this will go down a storm in my home. Please could you tell me can I freeze the mix before baking so I can bake them at a later date. Thank you so much x

    Do you want to freeze the dry mixture or the mixture with the milk? I often keep the dry mix once I've prepared it in the fridge for a few days and then add the liquid prior to baking. The scones can be made and cut and frozen either. I pop them on a tray in the fridge and when I need them I take them out and bake at the temperature as per the recipe Hope that helps:)

    I just used single cream - you can also replace with whole milk Barbara if you don't have it in:)

    Hi Connie I bought them in Lakeland a UK shop - they are called "6 Crimpled and Plain Plastic Scone and Cookie Cutters" they are £4.99. Am sure you will pick up a similar set more local if you don't have Lakeland close to you .
