How to make Clotted Cream - Full Recipe.
TIMINGS:
Prep Time: 5 mins.
Cook Time: 12 hours.
Chilling Time: 12 hours.
Total Time: 24 hours 5 mins.
SERVINGS:
Serves 8 people.
INGREDIENTS:
• 4 cups (1000ml/34 fl oz) Double/Heavy Cream.
• Do use high fat content cream.
• Do NOT use ultra pasteurized cream.
METHOD:
1. Preheat the oven to 80°C/175°F - would recommend using a conventional oven setting and not a fan oven as the fan oven will dry the clotted cream out too quickly.
2. Pour the cream into a large oven-proof dish, the one I use measures 6x9 inches or 18x24cm.
3. You'll need a dish with a large surface area for evaporation to occur, so you can create the most clotted cream.
4. Place in the oven for 12 hours - it’s a long time, but it’s worth it when you taste how nice the clotted cream is. I put mine in the oven overnight and it’s ready in the morning.
5. Make sure your oven isn’t the type that switches off after a specific number of hours!
6. When the time is up, remove from the oven and leave to cool at room temperature for an hour.
7. The cream will have a lovely yellow bubbly skin on top - when this sets it’s the clotted cream.
8. Cover the dish with cling wrap and place it in the fridge for 12 hours so it sets.
9. Remove from the fridge, using a spoon, remove the top layer of the clotted cream.
10. There will be liquid underneath, keep this and we can use it later for making other things such as cream scones or cream potatoes.
11. Or simply use it to dilute the clotted cream if you want it to be thinner.
12. Place the clotted cream in a glass bowl or jar and cover with cling wrap.
13. Mmm Scrummy!!!
Devon or Cornish Scones?
What's the difference between a Devon and a Cornish Scone? The answer is really simple. In Devon, they split the scones in two and add the cream first and the jam second. Whereas in Cornwall it's the opposite way around. They split the scones in two and add the jam first and the cream second
STORAGE:
The clotted cream will keep in the fridge for up to 5 days.

    I'm American🇺🇸. I used the heavy whipping cream to make clotted cream. It really tasted like cream cheese, but it's actually clotted cream. Ah yes! My first tow times having it. That's why I had a French themed afternoon tea with my younger siblings and for watching Miraculous Ladybug in French dub.

    Perfect I do mine overnight. No real heat from the oven as the temperature is so low x Hope you like it when you make it. If you have a slow cooker it's a great way to make it too. I have a tutorial on that as well x

    My SO has a Book Club meeting at which I will offer The Queen’s Scones with Clotted Cream and my own made Four Citrus Marmalade. All of her book club associates are Married With Children, so she allows my talents to be shared. And, I’m on the downhill slide of my 91st Circumnavigation of the Sun.

    Looks lovely. So the cream is served cool on the scones or do you leave it out to get to room temperature. USA here and I make delicious scones and now want to make the clotted cream. I've been using fresh whipping cream till I saw your video.

    Hi there it's normally served straight from the fridge - I know when it's served for afternoon tea with scones in restaurants - small pots of it are kept in the fridge and then placed on the serving plate when served to customers. Hope that helps. It is delicious I can't get it anywhere local so it's great to be able to make it - know it takes a long time to actually get it but definately worth the wait. x

    Can you make a video of the stove top version? It is much quicker and is another option for those who don’t have the option to be at home all day to cook or relieves them of cooking through the night.

    @@ScrummyTV there is a version that takes 20-30 minutes on the stove top and then cool down time in the fridge. So easy.

    I'm afraid here where I live the only heavy cream I can buy is ultra pasteurized. Will this work? Thank you

    Sorry ultra pasteurized won't work in clotted cream .

    @@ScrummyTVyou are so right. I’ve tried so many times & it didn’t work till I read that was the problem. Most if not all milk is ultra pasteurized here in the US. I been trying to find a small farm that sells it without ultra pasteurization.

    cream in a microwave nuke on medium five mins then check it,go again five mins and check about three times is good depending on your microwave.remember all ovens aint the same...i made some normal oven way and micro oven and results were better in the mic.......just made eclairs and profiteroles with cream theres a russian guy on yt he has it to a fine art.....
