how to make miso carbonara

i actually posted this way back in March of 2021, but i made a few adjustments to the recipe. i was asked to do this recipe for a brand deal, so i thought why not do a full length you tub video on it as well.
i think this dish is arguably one of my easiest recipes. i find that it’s rather unique, different from a typical pasta dish. the ingredients are also fairly accessible too. you can go a variety of ways with this dish as well.

RECIPE • MISO CARBONARA
serves 2-3 servings
0.5 lb - dry spaghetti, bucatini, any long pasta shape
2 tbsp - unsalted butter
0.5 - medium yellow onion, finely diced
7 oz - mushrooms, shiitake, button, maitake, anything
1 - garlic cloves, finely chopped
2 tbsp - sake
black pepper
method
prep onions, mushrooms, garlic, butter
heat a pan on med-high heat, melt butter, cook onions down until translucent
add mushrooms + garlic, sauté until golden brown
reduce to med-low heat, add sake and a few cracks of black pepper
add cooked pork jowl to mushrooms
boil a pot of heavily salted water
cook your dry pasta until 30sec before al dente
save 1 cup of pasta water
reheat mushrooms + pork with pasta water over med-high heat
add pasta, carbonara sauce over low heat
mix thoroughly and quickly, adding a splash of pasta water to help thicken (the starch/salt in the water helps bind the sauce to the noodles)*
if too thick, add more water | if too loose, heat up on a pan or add more paste/cheese
*carbonara is tricky because you need just the right amount of heat to emulsify + thicken the sauce, you can mix the pasta and paste in a bowl, or you may have to heat the pasta in a pan for 15-30sec.

CARBONARA ‘SAUCE’
5 - egg yolks
1 - egg white (if too thick)
1 tbsp - shiro dashi (or 2 tsp dashi powder)
2 tbsp - lemon juice (1/2 a lemon)
2.5 tbsp - white miso paste
1.5 cup - parmigiano-reggiano, grated
method
whisk all together in a container

MISO PORK JOWL
0.75 lb - pork jowl or pork belly
2-3 tbsp - white miso paste
wearing gloves, rub miso paste all over the pork
let sit preferably overnight
this dry rub adds another sweet, savory level of umami to your pork
sear on med-high heat until cooked through
dice into small chunks and toss into mushroom mixture

Italian born and raised near Roma, actually it exists a carbonara named carbonara imperiale (for the emperor) made with porcini mushrooms and truffles. Btw in Italy I've yet to see two people make carbonara the same way. Ps miso is better than cream it's like an instant cure for the meat.

Even with a team of writers I wouldn’t be able to jam as many references and comparisons into a 7 minute video. +1 on the chopsticks as superior utensils too

@@PanaMaJwaaRd I use chopsticks to eat potato and tortilla chips so that my hands stay clean, whether I'm typing or watching videos. Can't eat chips with a fork! (In before cringe replies of "skill issue" and other BS.)

as someone of Japanese and Italian descent, I think this has gotta be a homerun I'm sure some overzealous, orthodox italian-cuisine fundamentalists might have issues with this being called Carbonara, but I think it's time that word meant more than the specific dish, and meant something more like the general method of emulsifying an cheesy-eggy sauce in pasta water like this, such as this dude has done so so well
The only tears coming out of this Italian are tears of joy with this masterpiece dish 🥹 *chefs kiss*

I have white miso and have been wondering what to use it for and this is the first thing I am going to try making! It's so unorthodox that it stands out on its own as a beautiful modern "fusion" (if I dare use that term).

I THIUGHTT THR PLATE WAS AESTHETIC.
Ok I made this and it was pretty good. If I made it again I would cut down on the cheese. It ended up a little salty for me. Pork jowl was also good but very fatty. I would maybe use less than I think I need next time or even use a leaner cut.

As an Italian i have to say I actually like this, i would have made a teriyaki marinade for the meat cos you already put miso on the sauce, but looks really good.
yo! When rasping parm, try standing up your microplane with the handle side going straight up. This puts way less strain on your arm and allows the microplane to do the work, not your arms :)

I'm Italian and I'm not mad. People usually get mad when you make "carbonara" and then you completely ruin it. This one starts with a completely different concept. I've also cooked carbonara with different veggies etc... Which are not traditional, but my friends always liked it anyway!

@@susanlee8515 yes. But I don’t think it would be a good sub, because bacon would introduce a different flavor entirely - the bacon flavor. Especially since the pork is only seasoned with miso here; I think it wouldn’t really be the best match

This is an absolute banger but I think sauce should have less miso, I put 1.5 tbsp and it was overpowering still. Maybe that's just the miso I've got
Great recipe, but definitely watch the video at x2 speed. People talk like they’ve just smoked a joint in general in videos. Bump up the speed and your ears will get used to it if you’re just for watching for the content.
