INGREDIENTS:
2 cups (240 gr) all-purpose flour
1 TBSP baking powder
1/4 tsp baking soda
1 1/4 tsp kosher salt
6 TBSP (85 gr) cold unsalted butter (cut into small pieces), or lard, or shortening
1 cup (237 ml) buttermilk (*see note for substitution)

Today I am showing you how to make biscuits using the Biscuit Mixing Method. This mixing method will help us create biscuits that are incredibly flaky and tender. You can use butter, shortening, or lard to make these biscuits.

Hi everyone! Just to clarify for those who are coming to this video that are not from America. This is an American style biscuit, which is very similar but slightly different from a scone. American biscuits typically call for buttermilk while scones typically use cream. Scones also often contain egg while American biscuits do not and biscuits also have a higher fat ratio which creates a more flaky texture. These are typically eaten as a side dish to a meal or slathered in sausage gravy for a meal on their own. What people in England (and some other parts of the world) call a "biscuit" is what Americans call a "cookie". Hope that helps!

@@jeanflavin1720 yes you can also add a tablespoon of white vinegar or lemon juice to your milk (better with full fat milk), stir and let that sit for about 10 minutes to create a buttermilk type substitute.

I have struggled to make biscuit for 50 years, I'm 59, I followed this recipe and they came out amazing! I mean I was so bad at making biscuits that my mom used to make some and freeze them for my husband's birthday so he could enjoy home made biscuits! My mom's been gone for 14 years now so he hasn't had a good biscuit until now. Thank you

Have been baking professionally for years, and LOVE the step by step instruction that includes not only the "How"... but the "Why". You leave nothing to the imagination, and speak slowly and clearly enough to not overwhelm the beginning baker. I liked this a lot... nicely done.

Can I use this on top of a chicken pot pie?
I just want to thank you, these biscuits turned out perfect. I live in Florida, it is always to warm even though we are in November. To keep my ingredients cold, I freeze my butter, and grate my butter with a grater I also placed in the freezer while mixing my dry ingredients. While at it, I placed my measuring cup and buttermilk in freezer until I was ready to use. I also sifted my dry ingredients together. I was very happy with how beautiful they turned out!! Thank you😊❤

My grandmother from the south used to make these when I was little and no matter how hard I tried I could never figure out how she got them layered. Until now. When I saw you layering I remembered her doing that. Thanks so much. Can't wait to try this.

Oh my God. So....I have never made biscuits. Always been intimidated by baking in general. Biscuits especially as I've always heard it takes a while to get them right. So, this is the video I chose to go by, and holy crap on my first attempt, I made perfect buttermilk biscuits! PERFECT. Cookbook photo perfect. They tasted great. Wow, it’s amazing how the simplest details make such a difference. I used lard instead of butter then hot out of the oven put some southern style sausage gravy on top of the biscuits!! Delicious
I made these biscuits with our supper tonight (Dec 7,2020). My husband LOVED them. They are the best biscuits. Also, not difficult to make at all. Thank you for the newest staple in my house!!

This is my go-to biscuit method (except I cheat and use self-rising flour). It's all in the folding to get the wonderful layers! Thanks for another great video, Bettie! I love them all! You are such a great teacher!
I just discovered your channel and I love your tutorials!!! I cannot wait to start baking. Yesterday, I made French bread for the first time, not your recipe. It turned out ok but not the best consistency, but I had no way of knowing what went wrong or how to improve it. The way you explain what each ingredient, step, temperature, etc is doing makes a huge difference!! If we don't know what does what, how can we improve a recipe? Fantastic. Made them just like a good restaurant. Reduced kosher salt by 1/4 tsp, butter by 1 tsp, and added 1 tbp of ACV to whole milk (fairlife since I’m lactose intolerant). Still came out perfect and tasty for savory biscuits.

Spot on tutorial! And you didn't make the mistake that some folks do by twisting the cutter into the dough which can hamper rising and/or make a tougher biscuit--you made a straight cut. Great directions. ;)
Made these today with the listed yogurt substitute for buttermilk. Also used salted butter and skipped the separate salt requirement. I used a ground meat chopper tool (a different brand than “ChopStir”) in place of a pastry cutter to cut in the butter. Worked great! Lastly, I baked 1/2 on a buttered cast iron griddle and the other 1/2 in a casserole dish to compare results. The cast iron ones cooked quicker and looked “prettier,” but all of them turned out delicious! Can’t believe how easy these are. 😊

Thanks. I followed your recipe and method and finally made some really good biscuits. I used the sour cream substitution for buttermilk. I had a couple with honey butter for breakfast and one for dinner to make a sandwich with chicken tenders and honey mustard dressing.
This has become my tried & true biscuit recipe. It’s very simple & I even make it vegan by using coconut oil & hemp seed milk. My family loves them. So delicious either way‼️

I just made your biscuit, they are the best i e tried to date! the only difference was mixing techniques. I put all ingredients on counter mix leaving out 1/4 cup flour for when i’m folding, and i do not mix i bring it together then fold. Thank you for this awesome recipe!

It sounds strange, but in a pinch you can also use plain yogurt, or make your own by adding teasp of white vinegar to the milk.
OMG!! I have been trying to make biscuits for eons and none of them came out edible!! I have tried so many recipes. I am not sure how this came up on my feed, BUT IT WORKED!! I followed her instructions and the biscuits came out PERFECT!! I am so happy. I dont know how this is different from all the others, but now I can stop looking! THANK YOU so much!!

I love this recipe so much! Tastes SOOOOOO GOOD! Made it by myself, I'm younger than 15, that just says for easy this is! And yes i did every single thing my self! My sub for buttermilk is a tbs of lemons and milk and sub for the soda is just more baking powder! :)
These were better than store bought. I added a little Apple cider vinegar to very cold milk to make the "buttermilk."

Wonderfully organized and informative video! Thank you. The only thing I do differently is I do use a square cake pan and I use a square biscuit cutter.

Hi sweetie I was finally less fearful of a disaster in my kitchen and so felt VERY INSPIRED TO MAKE THESE GREAT BISCUITS(which I WANTED TO MASTER FOR YRS. SO this BEAUTIFUL WINDY SUMMER NYC MORNING. I used mostly vegan organic ingredients like almond milk and avocado butter w/flax the results were Amazing super moist beautiful and very flaky I use vinegar since I didn’t have lemons and that’s the only thing it doesn’t really taste like butter milk no sure if IT WAS SUPPOSED TOO but THEY DO taste really good maybe I should’ve use more vinegar in my almond milk I have dairy allergies and lupus so they’re many ingredients I CANNOT CONSUME. PLEASE LET ME KNOW YOUR OPINION ON THIS MATTER .
I've been watching loads of biscuit videos. Made several batches. They've been very good. Your video is excellent. I especially like the tall cooking pan so the biscuits don't fall over. I'm looking for a muffin pan that has tall sides so I could drop the dough in and have my biscuits standing straight!! If you were to marry my son, your name would be Baker Baker...haha!!!!

All you need is a Southern accent and you’re in the know! 😉. I grew up in the South and this is exactly how I make biscuits but I just use my hands in the mixing.

I just tried it, but it is too salty. I used regular table salt and the liquide (buttermilk substitue) was only 1/2 C cause the dough was already moist.

If you use regular table salt, you need to weigh it or use less. It's finer grain than kosher, so more salt will be in a given volume.
