How to make Falafels

Falafel is a fried ball or croquettes made from ground chickpeas, fava beans or both (Falafel is usually made with fava beans in Egypt and chickpeas in the Levant). Falafel is a traditional Middle Eastern food, usually served in a pita. Falafel balls are topped with salads, pickled vegetables, hot sauce, dressing, and drizzled with tahini-based sauces. Falafel balls can also be eaten alone as a snack or served as part of a meze (assortment of appetizers) platter. Falafel is eaten throughout the Middle East and is a common street food. It is popular with vegetarians around the world.
Ingredients:
1 bunch cilantro
1/2 bunch mint
1/2 bunch parsley
6 sprigs of fresh dill
1 small onion
6 cloves garlic
1 teaspoon ground coriander seed
1 teaspoon paprika
1/4 teaspoon ground cloves
1 teaspoon cinnamon powder
1 teaspoon black pepper
1 teaspoon salt
1 tablespoon baking powder or baking soda
4 tablespoons sesame seeds
You will need:
A deep, heavy-bottomed pot
Thermometer
Neutral oil, such as corn oil, that can withstand the heat
Slotted spoon or spatula
Temperature:
Between 375F (190C)
Too hot and the dough will burn before the inside is cooked. Too cold and the falafels will absorb too much oil and become greasy.
Safety:
Never fill the pan more than 2/3 full of oil.
Fry a couple of pieces at a time, don't let them pile up
Use a spatula to carefully push the food into the oil
Other tips:
Take food out when it is a little lighter than you want it to be as it continues to darken once it is out of the pan.
Adding food to hot oil causes the oil temperature to drop, so always keep an eye on the oil temperature, and measure the heat before adding more falafels.
Used oil:
Let it cool before discarding.
Do not pour it down the drain.
You can get at least two more uses out of frying oil if you store it in an airtight glass container away from light.
