This recipe is for 12 to 15 tamales
Instant pot cook time 35- 38 minutes (quick pressure release)
Ingredients/shopping list
10-12 Corn Husks
1.5 pounds masa (nixtamalized corn dough)
1/3 cup lard (or vegetable shortening)
1/2 cup chile sauce
1 Tbsp Chicken bouillon
3 cups Water to boil chiles
7 guajillo chiles (for spice use New Mexico ❤️)
6 garlic cloves
1/2 white onion
1 Tbsp chicken bouillon (or start with 1 tsp salt)
1.5 ponds Pork chopped into small chunks (pork butt, pork shoulder)
2.5 cups water
2 bay leaves
1 tsp salt (or 1 tsp chicken bouillon
1/2 poblano or Anaheim pepper thinly sliced
1/2 potato thinly sliced
Desired amount of olives
raisins are optional : )

Masa Ingredients
1.5 pounds masa (nixtamalized corn dough)
1/3 cup lard (or vegetable shortening)
1/2 cup chile sauce
1 Tbsp Chicken bouillon
* Chili sauce will vary depending on climate and brand of masa. You’ll need 1/2 cup to 1 cup of Chile sauce, adjust accordingly.
* We are in a humid state and I used 3/4 cup total
Chile sauce ingredients
3 cups Water to boil chiles
7 guajillo chiles (for spice use New Mexico ❤️)
6 garlic cloves
1/2 white onion
1 Tbsp chicken bouillon (or start with 1 tsp salt)
* Save 1 cup Chile sauce to season masa
Instant pot pork
Instant pot Cook time 35 minutes
Stove top cook time 1 hr 15 minutes- Bring all ingredients to a boil- Skim impurities and place a lid on your pot- Cook on low until soft and tender.
1.5 ponds Pork chopped into small chunks (pork butt, pork shoulder)
2.5 cups water
2 bay leave
1 tsp salt (or 1 tsp chicken bouillon)
* Save 2 cups of broth
* 1 cup will be used to blend chiles and 1 cup to keep filling wet

    I love that you mentioned that men should help! My grandma had almost all boys and got sick of doing them all herself, so she made the rule "you want tamales you have to help." Everyone was on masa spreading duty, she made the meat, rolled them, and cooked them. Decades later I'm still continuing the tradition, I do her duties, and my dad, husband, and preschool sons will be helping spread the masa.

    omg you guys! i tell you! these were THE BEST tamales i have ever had! I added corn and black beans for the filling.. Me and hubby made about 45 and planned to freeze and give to friends...ya that didnt happen..we ended up eating them all within a week😂😂 getting ingredients to do it again this weekend! THANK YOU!❤❤

    I miss that. My mom loves about an hour away (without traffic). One of my sister's lives with my mom, my oldest sister lives right next door to my mom and the youngest lives about 20 minutes from my mom's. My mother in law makes them as well but she always makes them while I am at work. A few years ago I started making them by myself, until I finally made comfortable for our home (similar to Stephanie's). I use black olives and no raisins.

    The way you spread the masa with the bench scrapper makes so much more sense. You were able to get it very even that way. You went in to so much detail on everything but not the masa (or I just missed it) it was already mixed when you put it in the mixer with the sauce. Did you just follow the directions on the bag it came in? Thanks for all of these amazing videos.

    I don't use the basket on my Instant Pot when I make tamales. I just put the thingy on the bottom, tilt the liner, and then fill it up with tamales. I've never had a problem or remember how many we put in but I think it was around 22 and *BOOM* done. it's such a time saver. I don't have to keep checking if the water boiled out. No pennies rattling at the bottom of the pot.

    Thank you ladies for making these videos for us that want to learn how to cook dishes from other cultures! I can make any Italian dish that exists and most Lebanese but Mexican food is my weakness and I've never had REAL AUTHENTIC MEXICAN FOOD because there's nothing like that where I live. You really make the recipes easy to understand and execute and I love when you tell us to make it comfortable for our home because that's important with picky eaters or food allergies.     For me a soft silicone spatula works best. I made tamales after Christmas, s d saw you use the instant pot, so I tried it, and my hubby was so happy that he got to eat them within an hour. It is just me and my husband and somehow end up making over 100 tamales. For Christmas I made pork, chicken, beef, rajas con queso, pineapple and raisins. I ended giving some to my pastor, my mom and some friends. This becomes my Christmas gift to them.

    My Tia used to put an olive in each tamale. My wife and I make em together. I prepare la carne, and she does the masa, then we roll em together. She makes a Honduran style also, con un costilla, arroz, papas, jalepeno, peas, and greenbeans, pero con masa blanco. La costillas marinate in the chile sauce overnight and ee put a spoonful of the sauce in each one. Toda madre!! So good!!

    My husband broke my beloved instant pot by putting wet rice in it without the pot insert! 🤦🏻‍♀️ it got all into every crevice. Such a fail! Lol Ive never made tamales cuz they def seem so intimating but you make it look fun. Its like a work of art ❤️

    Yummy love ur videos💕 I have used the scraper with making my Tamales much faster for me & I started my daughters young 3 & 5 to help mami & they used the tortilla press made it easier for their lil hands.

    YEA game changer!!! I made masa, vacuum sealed it for approx. for 2 doz. same with meat mix! OR IF your in a rush, make ahead vacuum seal dz at a time, take out thaw ( KEY important or their mushy) TOOOOO COOL! unexpected cravings? company? TAMALES!!!

    I love tamales so much and have been eating them since I was a teen when I first got to eat some which my father would order when I lived in Saginaw, Michigan. He would order some from this one area store and pick them up about 30 minutes later. Those you made look great and you all must have had a feast eating those you made and I love the video so much and Cloud is always great at operating the camera, Stephanie.
