Carnitas enchiladas recipe- • Easy enchiladas filled...
Ingredients
Corn tortillas
2 to 3 pounds of pork shoulder or pork butt
2 tbsp lard or shortening
1 tsp salt (Himalayan)
2 garlic cloves or 1 tsp garlic powder
1/4 cup milk
1/4 water
Juice of 1 orange
1 small bay leaf
Topping options: chopped white onion, Purple pickled onions and radish, and Roasted salsa verde
1. Season pork pieces with 1 tsp salt
2. Set the instant pot on sear- Allow 5 minutes to warm up- add 1 TBS lard + pieces of pork + garlic and sear 6-7 minutes
3. add water+milk+orange juice+ bay leaf
4. Set instant pot on pressure cook for 32 minutes
5. Remove carnitas from instant pot and remove remaining broth
6. Set instant pot on sear- Allow 5 minutes to warm up
7. Add 1 Tbs lard + carnitas and sear for 5 to 6 minutes
8. Boom Done!

That looks delicious! You two remind me of my sister and I? We used to do everything together. She loved my cooking...I was always the cook, she was the taster. Unfortunately she passed away 13 years ago at the young age of 47. Cherish every moment you have together. It’s very heartwarming for me watching you two.

My 8 year old grandson has been having me show him some of your recipes. He has decided to become a chef, so he is picking out recipes for us to cook together so grandma can teach him how to cook. You know grandma is the best cook in the world lol. He has picked for next week the crispy fried potato tacos. We will report in how the turned out, if we get the air fixed. If not I explained to him it will be to hot to fry anything because with it being hotter then normal here the house is running 90plus everyday. Thank you for all you do. He doesn’t like spice at all so on some recipes will we be leaving out the peppers. If you have any great kid friendly able to cook recipes you could tell me about that would be great as we both love Mexican dishes. Grandma is excited because she found a Mexican grocery store about 15 from where we live. Keep on cooking girls.

It’s funny. I dedicated “Wind beneath my wings” to my older sister Diana. There are 8 of us. My mom had four boys first, then 4 girls. I’m the last born. La Bebe. Lol She inspires me everyday, because of her I became a born again Christian. My mom died when I was 27, I’ll be 56 this Sept 2. When me and my sister Diana took care of her in her dying bed, due to pancreatic cancer, she could barely whisper and she asked my sister, (unbeknownst to me), “Miiha.. take care of the baby” My sister thought it was her grandson, but my mom said no silly, “MY BABY” I was 27when . she went to be with the Lord, and she “STILL” called me her “Baby” Well, actually I am cause I’m the last born. The reason for this statement, is cause ever since my mom told my sister Diana that, to this “Day” she still said, too bad, little sis, “MOM TOLD ME TO TAKE CARE OF YOU SO TOO BAD.. DEAL WITH IT! She can be a bit condescending at time, but I love it.. Lol We have ALWAYS BEEN CLOSE. I would follow her like a lost little puppy whe I was 5 or 6. She 11 years older than I. Then I decided to dedicate “Wind beneath my wings” to her, and I Karaoke , yes, Karaoke that to her she cries, and I can barely hold a tune when I see grateful tears running down her tiny face... 🙏🏼😀❤️😌😌😌😌🥰

Sorry about your Mom Sister, I lost my Mom a yr ago 10/27/2019 and we were 7 daughters to my Mom. I also lost my Baby Sister Charlene in 2015 suddenly she passed from an aneurism, she was the 5th sister ,I am the eldest. I miss both of them very much. Also my Birthday is Sept 3. Just wanted to share some similarities that's how God put and guides his children in the same or similar journey together. I'm glad your eldest Sis looks out for you, because your special and I wish my baby Sister was still here, but I have 5 other Baby Sisters, if they need me I'm there for them too. God Bless you and your Sister, love one another always.🕊❤🕊 Shalom.

Hello! True story-a few weeks ago, I was going down the KZread rabbit hole looking at coffee recipes and my wife and I stumbled across your cafe de olla video. My wife is Mexican and she was like, “Ooh we gotta try that!” I said, “hell yeah” and ended up making it right after we watched it, it was 10 o’clock at night!🤣 Turned out awesome! Fast-forward to today, I typed in, “Instant Pot carnitas” and your video popped up 1st. I told my wife, “I think I’ve seen this lady before!” I scrolled thru your videos and as sure as s-t, there was your coffee video!🤣 Incredibly beautiful lady cooking food-I’ve subscribed!😁 I’m trying this recipe tonight, wish me luck! I'm a gringo native Texan and am so happy to see this! It is almost exactly how I have figured out how to make my own carnitas over the years (which are a big family favorite). I do the final sear in my cast iron pan on the stove with bacon grease (and sometimes some cumin) until they have that perfect cripy/soft texture. Served with cilantro, onion, radishes, lime, and homemade chile sauce (verde or roja). I look forward to adding the extras (orange juice, milk, and garlic) to the pressure cooking process. Thanks!

Just made a huge amount for dinner tonight. Used Thick pork chops from Costco as it was what I had. Planned on having leftover for lunch and now I have to figure out my lunch as nothing was left. Super easy....thanks ladies for helping me prove this weda can cook. living in SoCal I can't fake it with what it's supposed to taste like, they (family) expect it to be on point.

It tweaks the flavor a bit. Not so much sweet because I only used half a small can for 2lbs of meat
Love your channel here. All your recipes are so easy to follow and I actually have most of the spices needed in them but the Instapot...that was the clencher for me on this one. I made this for Christmas eve dinner tomorrow. While I didn't have an Instantpot, I did it on the stove low and slow. It is amazing. I also made queso fresco, pickled onions and jalapenos, and roast salsa verde. My son proclaimed mom a "culinary genius!" Thank you for all the time and love ❤ you put into these videos and our cooking skills. I have made tonites recipes, but also many of the cassaroles, carne asada, and so many othere things. EVERY SINGLE RECIPE has turned out wonderfully. You have a kind and caring heart. It comes thru in your videos. Happy holidays! Keep doing what you do. (Please write a cookbook!)
