Rick Makes Pork Tamales | From the Test Kitchen | Bon Appétit

Тәжірибелік нұсқаулар және стиль

Join Rick Martinez in the Bon Appétit Test Kitchen as he makes pork tamales. You can make masa, a dough made from ground corn, in two ways: instant and fresh. Fresh yielded the best corn flavor and best texture, but you can use corn masa flour too, which is easier to find. You can find fresh masa and dried corn husks at tortilla stores/factories, international sections at larger stores, or online. Whichever masa you choose, be sure to save some of the chile purée from the pork filling.

My mom passed away two months ago, and she died before I could learn most of her recipes. While I'd spent the past 20 years helping her out with tamales every christmas... I never did learn how to make the masa (I knew the basic steps, but not the specifics about the ingredients.) We do things very differently in my family (we boil the pork, then use the stock in the masa and to cook the tamales, we boil the chiles instead of toasting them, and then we mix those before making the tamales) but this video pretty much filled in the blanks of what I have to do. I think I'll try making these next Christmas. I won't have anyone to share them with, but I don't want to forget our yearly tradition. (I ended up making the new year ham last year... so I guess I was already halfway to doing things on my own.) Thank you.
