I'm African American from the US and our ancestors who were enslaved here in South Carolina passed down the jollof recipe to us. We call it red rice because of the color of the rice after cooking it. .we weren't taught to add any red chili 🌶️ peppers to our recipe. We use salt and black pepper to season it along with 🍅 tomatoes and tomatoes paste. Tomato was a big crop on my island in South Carolina for families so families preserve whole tomatoes in mason jars which is call canning or jarring. We used the homemade jarred tomatoes when tomatoes were out of season. In my family, we don't add chili🌶️ peppers to our food because everyone tolerance for chili🌶️ pepper is different. We have hot sauce in a glass bottle that is made from chili 🌶️ peppers and each person can add it to their food as they decide to add i. I've never added chili🌶️ peppers to jollof rice. I like adding hot sauce to fried fish and to chinese food.

@@pinkari7455 Thank you! I'm from an island in the US which is called living in the country and in rural areas . We love it. Whenever I go home, I enjoy the peace, quiet and greenery! Rural living is very similar to African villages. The main county roads are paved but the roads coming into our private land are dirt roads. Farming personal gardens on our land still goes on today but not as much as when I was growing up. We eat what is growth and sell the excess. We grew up eatings plenty of seafood. Families are very close in rural communities like in African villages.
These recipe is the best.go and try it and thank Janet later. I cooked almost big full pot and is almost gone.
