Thank you! My last batch of Jollof Rice was disappointingly, mysteriously mushy. The first time I made it it was was glorious. I will take your tips and try again tomorrow. I hate wasting food but mushy rice is not for me. Bummer. Back to the drawing board, thank you your help and advice here.

I'm in the southern states and I really want my friends to be like OMG what kinda rice is this😂 anyways my flavor is good but its not as separated as I would like. Tried this recipe. Came out single grain and tasted so delicious like the taste of Jollof I wanted to experience. The only problem is my pan made a lot of under which mixed with the rice as I stirred. I am trying today with a different pan today.
