Today we're cooking up some Nigerian Carrot Jollof jollof rice with shrimp, very tasy and healthy, we're using lots of vegetables, carrots for color green peppers red peppers, onions. This is a quick and easy Nigerian jollof rice recipe with shrimp. enjoy!

INGREDIENTS
2 cups of jasmine rice
3 cups of wate
half of a green scotch bonnet pepper
2 medium size carrot
half red bell pepper chopped
half green bell pepper chopped
half of onion (note I used green onions)
1/2 tsp curry powder
1/2 tsp nutmeg
1 tsp ground black pepper
1/2 maggi cubes
10 to 12 deveined shrimps
1/3 cups of the carrt shaft

    I find out Jollof rice take more oil than ordinary rice, if it lack it will stick.

    Lion Sylvestre you can make Jollof rice with less oil without it having to stick. It’s all in the sauce and the steaming process.

    @@bettyliciouscooks When I mean stick, it look more beautiful and shinier with more oil than the ordinary. Many Nigerian and Ghanaians mention it I find it truth. I like the boiling method she use for the rice it less work on cooking.

    No, it’s not Jollof rice more a Nigerian party fried rice. Jollof rice is my signature dish and this is not even marginally close. It looks tasty though. Have you eaten Jollof rice before?

    Andrea_ Why the mention of harm? The fact is it’s not anything like Jollof rice. Representation does matter especially as African and Caribbean food is practically marginalised on main stream television media. So we at least should be authentic as possible. I wouldn’t make rice and peas using a tin of Heinz baked beans and tell people it was Heinz rice and peas. It would not honour the traditions or rich legacy of Caribbean cooking. It’s my opinion and I said what I said.

    @@bettyliciouscooks So are so on point sister. There's nothing to debate. Jollof rice is Jollof rice. It can't be anything else.
