How to Fillet a Walleye and Debone a Fillet

Start to finish guide on filleting a walleye and optional deboning of the fillets. Filleting technique is the same for most fish, but the deboning guide is only for fish with a single row of bones, not a y-bone like pike and whitefish.

    Thanks for posting this. Yes, the large fillets cook a lot better when cut into chunks or pieces.

    Yes, that was my cat Zeus. Indoor only, I had to lock him in the bathroom just to keep him out of the way, and he wasn't too impressed, because he knew fish were being filleted. Usually he's on the chair next to me patting my arm with his paw letting me know he's ready for a piece of fish.

    @gewglesux Yes, taking the fillet off works for everything we have in Lake Temagami, Smallmouth Bass, Lake Trout, Whitefish, Pike, and Walleye. Any similar body fish will work with this method as well. The big difference is where the bones are perpendicular into the fillet from the fish body (the ones I showed how to remove). Some are located slightly higher than others from species to species.

    @gewglesux Deboning as shown is for fish like bass, trout, and walleye and can be done with a minimal amount of meat taken out, leaving a bone free fillet. Fish with a Y-Bone structure in their sides like pike and whitefish either require a large strip taken out, or a slightly modified approach. I will try and get a video done on that when the right fish comes along. :) The thickness of the bones also varies from species to species, and I find trout are finer and harder to feel.

    In our area there are many people that call walleye 'pickerel'. Growing up hearing it all my life has made for a hard adjustment to call them 'walleye' all the time.

    I hear that! I grew up in Huntsville, and never heard them called walleye. Then I found out there's a whole unrelated family of fish called pickerel (scientific genus Esox), so I trained myself to start calling our "pickerel" walleye to avoid confusion. It's the same deal as our red-breasted robin (no relation to the European robin) and the Eurasian elk (moose): settlers with no deep knowledge of zoology naming things after things they already knew.

    He's persistent. He hates to miss a fish being cleaned, and is always at the table by the time I get the newspaper down and knife out. :)
