Very sad that nobody talks about how the male buffalo calves are useless for the production for the buffalo milk needed for the buffalo mozzarella and are disposed of relatively quickly after birth. The female buffalo are allowed to live on, but many animals are kept in conditions that are not appropriate for their species. This is very farm-dependent, but in general it can be said that the increased demand for buffalo mozzarella also means consequences for the handling and husbandry of the female animals. Keeping them purely in stalls is the norm, with no access to pasture. At the same time, the animals are very sensitive; they must be constantly cooled from the outside because they have few sweat glands. And in order for them to produce the amount of milk of a certain quality, the use of concentrated feed is very high - which is also not species-appropriate for ruminants like buffalo. But well, the same applies to any factory farming, so that we can all eat enjoy tasty mozzarella, meat and eggs for a small price.

@@potatohead8537 It depends. I just searched it: some cheeses cannot be eaten by people with intolerance. Mozzarella di Bufala (the one made out of buffalo milk) contains a small quantity of lactose so it can be eaten although it's preferable to buy the Lactose-free version. The cheeses that can be eaten by lactose intolerant are mostly hard cheeses because the ageing process decreases the lactose inside the cheese.

Some people are just stupid is, stupid does. I'm all about wearing gloves, hygeine and sanitation, etc. But I AGREE with the bread baking and the dough. There are machines that will roll out the dough balls but, there are smaller bakeries, that still do everything mostly by hand. Kudos to them! I appreciate the small bakeries, everything handmade and fresh. Not like the mass produced, assembly line stuff!

Even when required to wear glove you have to wash your hands beforehand. You are never allowed to handle food with dirty hands with or without gloves. It simply is an additional level of protection, not a replacement. I do not know if it's necessary but it's not done out of lazyness. I guess if you have tiny wounds or loose skin you dont contaminate the food with it. Most workers would rather just wash their hands and be done with it, the gloves are seen as a bother to put on everytime.

Just before Covid shut down everything around the world, I managed to go to Puglia and stayed at a guesthouse in Alberobello and a hotel in Bari. Both of these places had fresh mozzarella which tasted like you were literally drinking right from a cow’s udder. (In the best sense, it was not gross at all) God the Italians really deserve the title of best cuisine.

I wish, wish we could get fresh Mozzarella in FL. It's always small balls in plastic sealed. More than once did I throw it away. In Europe one can get fresh one. Thank you for your video. My favorite cheese, too.

Thank you for this video. My grandfather was from Calabria but very young he moved to Argentina. He loved mozzarella and he used to go to an special place to find his favorite, braided mozzarella, which you can see briefly in this video. Thank you you made rember my nonno! I wanted to try the authentic mozzarella... my italian co-workers aways say that only in Italy can make the authentic mozzarella and seeing this video it really does prove it and they're proud of it 😊 I wish that I can tour in Italy and visit these places 😍 I'm a foodaholic so I want to try it 😋😋😋

Local Italian cheeses are the best,in taste,flavour and freshness. If one loves cheese....Italy has hundreds and hundreds of varaities from many different sources,cows,sheep,buffalo,goats just about every city,town and village produces their own original cheeses going back hundreds of years.

I would love to visit Italy one day even if I only go for the cheeses 😂, my grandfather nicknamed me Mousie when I was a toddler and it has stuck with me my entire life {I'm 48 and STILL Mousie}, cuz literally the only cheese I've ever tried that I didn't like is blue cheese.

Remember this, in Italy cheeses are not robbed of the cream,therefore the taste is super rich,if you like Ricotta ( who doesn’t?) get to the cheese maker early 7-9 am The ricotta is still warm,if you never had it......it’s a treat,it’s an eye closer in your mouth. Italians are up early 5.30-6.30 and shop early for the daily meal,fruits,cheeses,meats,fish Enjoy your trip! Don’t count calories.
