How Fish Cake, Crab Stick and Sea Grape Production in Japan - Japan Seafood Farm and Harvesting

Ғылым және технология

Kamaboko is a type of Japanese fish cake made from pureed white fish, called surimi (ground meat). The fish cake includes binding agents, such as egg whites, and natural flavoring, like sake. Kamaboko is made by steaming, frying, poaching, or grilling the fish cake until it is firm.
Crab sticks, krab sticks, snow legs, imitation crab (meat), or seafood sticks are a type of seafood made of starch and finely pulverized white fish (surimi) that has been shaped and cured to resemble the leg meat of snow crab or Japanese spider crab. It is a product that uses fish meat to imitate shellfish meat.
In Japanese, the word "umibudo" translates literally to "sea grapes," which is exactly what they are called in English. Sea grapes, however, are actually a type of seaweed (not to be confused with the seagrape tree native to the Caribbean) that grows in the shallow waters around Okinawa and many other parts of Southeast Asia. The standard Japanese word for umibudo that nobody knows is actually "kubiretsuta" and the scientific name for sea grapes that nobody knows is "caulerpa lentillifera." Since those words are way too difficult to remember, everyone (Japanese people included) calls the seaweed by nicknames, another of which is "green caviar" because of its resemblance to fish roe.

The music choice is interesting. A Japanese themed how it’s made using old Americana folk music you would hear in some backwoods region or if you went back a couple hundred years. Kinda gives my American mind the sense this is feel good food for Japanese seeing as they’re using feel good American folk tunes.

    - Hey Noel Farm 🚜, is it possible to show you guys breaking into the food to see or know what the texture is like? I love the voice overs but I really wish you explained the ingredients in these products as well as showing someone at least cutting the food in half so we can visualize the textures of everything. Much love. ❤

    - I love all of your videos. I also love the fact you're doing voice overs. ❤ I wish all of these people used gloves though. I understand they have them wash their hands, but what happens if they have an itch or a booger, than put their hands all over your food. Being clean, then not wearing gloves for certain things kind of defeats the purpose? Correct?. ❤

The video conveniently skips the fact that flour was added into the mixture. Flour is what gives the fish cake the firm texture. And, up to 60-70 % of the mixture could be flour aka carbs! So, if you eat this as “meat” on top of a bowl of noodles, you are eating a dish that’s almost 90% carbs. No wonder you can’t lose weight eating this stuff.

Oh they also missed the pink part on 3:59 .. They're "skilled craftsman" though? No shade just saying. I hope people aren't offended. I'm no where near perfect, but I am observing. ❤
