Natural Ice Cutting in Japan Ice Making and Harvesting in Lake Japan Traditional Shaved ice

Natural ice is produced by the severity of the winter. Its existence is mentioned in Nihon Shoki (Chronicles of Japan), and shaved ice, as we know it today, appears in Makura no Soshi (The Pillow Book). However, there are only five remaining natural ice farmers in Japan today. Three of them are in Nikko, Tochigi Prefecture, where the old tradition has been handed down to the present.
Shogetsu Himuro, which has operated in the Yamakubo district here since 1894, began drawing the spring water to form ice ponds on Dec. 22. The ponds cover an area of about 1,000 square meters and the process helps the ice to grow roughly 1 centimeter in thickness each day.
Company workers started cutting the ice into blocks before sunrise at 6 a.m. on Jan. 6 when the temperature was minus 7 degrees.
Blessed with a cold spell ideal for ice making, the ice reached a thickness of 15 cm about four days earlier than usual, the company said.
Each ice block measures 77 cm by 50 cm and weighs 48 kilograms.
The two ponds can produce a total of 4,800 blocks.

    OMG, i love Shogetsu Himuro. it's in Imaichi-shi and i try to go there every time i visit or pass by Nikko/Kinugawa onsen area. Their shaved ice has a smoother feathery quality and melts in your mouth without any jaggedness than regular shaved ice from elsewhere.

    Usually you preserve ice blocks in saw dust, it will last well into the summer. Depends on how big the ice block storage is.

    It's year round. 4800 blocks annually doesn't seem like much but for making fluffy shaved ice for just 1 shaved ice shop it's more than enough. if you put two shaved ice, one made with this natural ice, and one made with regular freezer made ice, same ice-shaving blade, same everything else. you might be able to tell the difference with the texture of the ice and how it melts in your mouth.

    Странная ручная пила. Зуб смотрит вверх и мелкий. Должно быть все наоборот. Да и черенок у нее должен быть длиннее. Так во много раз удобнее. Да и быстрее получаться будет.

    Видимо используется обычная пила, японцы работают столярными инструментами на-себя. Возможно, тянуть на себя - это использовать вес льда, хотя полосы довольно большие.
