Green apple achar (pickle) is easy to make and goes well with curries or Indian stir fried vegetables. It is a quick achar that hasn't dried in the sun as apples exposed to the sun do not keep well. They lose their crispness when dried out and don’t absorb flavours as well as they should.
Green apple achar can keep for up to a month in the fridge but I usually make small batches for freshness and texture. It doesn’t take too long to make a new batch and often retains its crunch. I often make enough to last a week or two - the quantity in the recipe.

I will admit, I prefer using ready made achar masala as it is a time saver and for green apple achar, it adds a light flavouring. But you can make your own!
Achar Masala Powder
Ingredients
2 Tsp Methi (Fenugreek Seeds)
1 Tsp Jeera (Cumin Seeds)
1 Tsp Sarso (Mustard Seeds)
1 Tsp Chilli Flakes/Powder
½ Tsp Kalonji Seeds (Nigella Seeds)
Method
1. Dry fry all ingredients except chilli powder/flakes
2. Grind to seeds to powder and mix with chilli flakes
3. Store in airtight jar

    Just finished making this and it turned out even tastier than it sounded while watching. Will leave it bottled and unopened for about a week or two to let all the spices and mustard soak into the green apples. Like everyone else who cooks, I snacked on it throughout: an hour into it marinating in salt, after wiping off all the salt, then only with the added spices and finally after mixing in the mustard oil. Each stage passed the test😇

    Refrigerator for up to 5 days, optimally 3 days (stays crispy and fresh)

    Hi there! Yes of course you can try the recipe with olive oil. I’m pretty sure it will taste just as good and you won’t need to heat olive oil :) enjoy!

    Can I reuse the pickle juice again to do another time? If not what to do with the pickle juice? I hate to throw things away.

    You can re-use the pickle oil for another batch of achar within a few days :)

    Hi Leah, I don’t think you’ll get that ‘Achar’ or pickle flavour without the mustard oil.. you can try making a small batch with your preferred oil to see if the taste is to your liking - before you try a bigger batch?

    Hi Asma, there’s no need to add vinegar with this recipe because the green apples are already a little sour !

    Hello! Yes you can use crispy apples but don’t store it for too long as the moisture will start to make it go bad!

    Hi Pallavi, you won’t need to use sugar because the apples themselves will have some sweetness. But it’s completely up to your taste!

    Hello there! There apples are not sun dried (they’re usually made to eat within 3-7 days) so keeping them for much longer could be the reason why your batch has gone bad. Perhaps next time, make a smaller batch and eat within the week 😊 it’s a quick recipe so you can always make more when you feel like it! ❤

    Haha yes! It’s a re-used Chinese chilli oil bottle 😆 makes a great storage jar for the short term and there’s less waste going to the landfill!

    Hello! An SLR camera to record and Adobe apps (sometimes iMovie on Mac) to edit.. even apps built into iPhone sometimes.. hope this helps!
