That Fiji Taste

In Fiji many cultures live together peacefully and share a common identity. Food especially, is a shared commodity amongst every race and there is a beautiful creation of unique flavours and tastes that results from the mixing of Fijian, Indian, Chinese, Rotuman and European cuisines. These are just some of the mainstream cuisines, there are many others that have influenced the flavours of Fiji.

It is my humble attempt to bring to the world these flavours and unique recipes and hope that it will bring a new kind of flavour to your table!

    Hello there! There apples are not sun dried (they’re usually made to eat within 3-7 days) so keeping them for much longer could be the reason why your batch has gone bad. Perhaps next time, make a smaller batch and eat within the week 😊 it’s a quick recipe so you can always make more when you feel like it! ❤

    This is so similar to alam pachadi ie ginger pickle from Andhra Pradesh in India. The only difference is we don’t add dates or sultanas and the red chilies are crushed. Love from India 🇮🇳🙏🙏🙏🙏🙏

    Hi there! You don’t need to use dates and sultanas - substitute it with some extra sugar as per your taste. Rice flour is also optional but without it your chutney may be too watery. Hope you enjoy the chutney!

    Hi there! Yes of course you can try the recipe with olive oil. I’m pretty sure it will taste just as good and you won’t need to heat olive oil :) enjoy!

    Hi Pallavi, you won’t need to use sugar because the apples themselves will have some sweetness. But it’s completely up to your taste!

    Why do you call it FIJIAN? It’s not, the dish is 100% Indian and Indians who migrated to Fiji invented this dish, don’t mislead folks. Fijian cuisine isn’t the same as Fijian cuisine

    Hi Nandni, this tawa isn’t a traditional one, we’re using a nonstick ‘crepe pan’ you can search online and you’ll find many nonstick pans in different sizes like this one. Hope you find one you like!

    Hello! Yes you can use crispy apples but don’t store it for too long as the moisture will start to make it go bad!

    Hi Sue! Please don’t be disheartened, roti takes a lot of practice but once you get it right, it starts to become really easy :) keep making them and don’t worry about the shape, you’ll get there!

    @@sueengland9106 sounds like your dough may be too firm, maybe add more water and knead it longer with a little oil or ghee. If you’re using Wholemeal, this flour is especially water absorbent so maybe adding a little extra water to make dough won’t hurt. Also, don’t let the dough be exposed to air, cook roti immediately or dust the dough balls with dry flour to prevent drying. Hope these tips help!

    Just finished making this and it turned out even tastier than it sounded while watching. Will leave it bottled and unopened for about a week or two to let all the spices and mustard soak into the green apples. Like everyone else who cooks, I snacked on it throughout: an hour into it marinating in salt, after wiping off all the salt, then only with the added spices and finally after mixing in the mustard oil. Each stage passed the test😇

    Haha yes! It’s a re-used Chinese chilli oil bottle 😆 makes a great storage jar for the short term and there’s less waste going to the landfill!

    Hi Leah, I don’t think you’ll get that ‘Achar’ or pickle flavour without the mustard oil.. you can try making a small batch with your preferred oil to see if the taste is to your liking - before you try a bigger batch?

    Hello! An SLR camera to record and Adobe apps (sometimes iMovie on Mac) to edit.. even apps built into iPhone sometimes.. hope this helps!
