Soup puts the heart at ease, calms down the violence of hunger, eliminates the tension of the day, and awakens and refines the appetite. Happy soup! Cheers, Domenico.

Roasted tomato soup is best with the freshest, ripest tomatoes you can get, preferably those you grow yourself. Whether or not you add cream is a personal preference. I like it, other family members don’t. I really appreciate that Ramsay doesn’t use a lot of high tech gadgets in his home cooking series. I have a tiny kitchen so I can’t store all kinds of tools/appliances with limited usefulness. Of course I’d love to have his stovetop, ovens, and more, but with a single good chef’s knife and a couple of really good pans, I can make almost all of his home recipes.

The chipotles are OK,as far as they go.When making a chili or chili type soup simmer an ancho or two whole in the water you will use until soft and pliable and some flavor came out.Remove, cool ,open ,remove any seeds you can and scrape out the flesh to add in.Just strain any bits or seeds out of the water and use it in the dish.Smaller whole dry peppers can just be left in ,or put them in a herb cloth or such. You get the flavor without gritty stuff.Aji Amarillo powder or the peppers is good in yellow curries, adds heat but blends into the color.

Welsh Rarebit, a staple of US cafés of the 50's, has all but vanished from menus. Really a damn pity. I have no doubt Gordon's is more faithful to the original, but regionally, we always preferred simple sharp cheddar and maybe an extra dash of Worcestershire sauce. Our cheese sauce was just a wee bit more runny. That's not uncommon and I continue to make it that way. The ol' wives tale about Welsh Rarebit (if you don't already know) is that it caused really vivid and often unsettling dreams -- even nightmares. There was a whole episode of Gomer Pyle that played off that ("Gomer: the Welsh Rarebit Fiend").

First recipe, I've never put cream yet I can assure you even without the addition of it, it's really divine in taste and it's not rocket science to make it. Last recipe is one of favorite ones since I love spicy food. However since I can't get hold of chipotle, I use dried bird's eye chilli instead. It may sound weird but even if you add bits of good quality dark chocolate you can lower the heat.
