+Nit Picker I've just recently started doing this for various dishes. Holy cow, it makes a huge difference in flavor! So much of that deep olive flavor is lost in cooking, so when it's added at the end it becomes very noticeable!

there is no olive flavor in olive oil. you don't want any olive flavor in most of the things you use olive oil to make. when you want olive flavor you would use extra-virgin olive oil.

+Caaarl Indeed, or pretty much anything with a salt flavour, and it doesn't even require a lot. Broccoli is definitely one my favourite greens because of how well it works with just a pinch of salt, not to mention it's a green, so yay healthy!

I made this as an assignment of my choosing in culinary school. Didn't use goat cheese and walnuts. But did finish with olive oil. The Chef instructor comment was the soup was very good! But the olive oil ruined it. I don't know if the oil was not top quality or not. But the soup by itself is awesome even without the walnuts, olive oil and cheese. This soup can make you look like a master chef. The flavor is incredible and takes so little time and so little ingredients to make. And the flavor is unbelievably amazing.

  • @glacialimpala

@@DeezN00tz99 There's no fake olive oil, the chef just didn't like the pairing because if you put virgin olive oil on something mild tasting as broccoli soup, it will dominate it.

It's rather amazing how easy it is. Gordon's is a little on the thick side, and nothing wrong with adding a little onion or garlic powder in there to give it a nice zing. This dish also tastes great with toasted sourdough on a cold morning.

Sauté onions in butter. Add chicken broth, small potato. When potato is done, add the brocolli. When it’s done, use IMMERSION BLENDER (skip blender). Season with salt & white pepper. Stir in heavy cream. THATS THE BEST Brocolli soup ever. (recipe from an old Gourmet magazine.)

@@dennisdistant The word ‘done’ means the potato is fully cooked. To test that it’s fully cooked, you can use a fork or knife and if it goes easily through the potato, it is finished cooking. Hope this helps!
