A little different than the traditional way of making fried channa, with the addition of freshly grated Parmesan cheese to elevate an already delicious snack.
for this fried channa you'll need..
1-2 cups dried channa (chickpeas)
1/4 teaspoon salt (add more if necessary)
3 tablespoon grated Parmesan
2 tablespoon chopped cilantro (shado beni is better)
1 scotch bonnet pepper
2 cloves garlic
2-3 cups veg oil for frying

    Looks good to eat! Reminds me of the brown paper cones we would get the channa in when I was in primary school long time ago. There was an old East Indian lady called Ms. Rosy that would sell channa, pholorie, tambrand sauce, chow, anchar & kurma in our school & she would roll the channa in these cones- the best was finding the salt at the bottom of the cone all seasoned with pepper & chadon beni (culantro).. #memories

    today I'm making the split pea Dahl and this wonderful snack. I barely had enough split peas so I used majority lentils. hope it comes out fine.

    Greetings from Sri Lanka Chris! Its amazing how similar caribbean food is to Sri Lankan and South asian cuisine, any idea how that came about? we also have two chickpea dishes that are very similar. One with the chickpeas deep fried, one with it boiled. both spicey, both great with a beer! Anyway keep up the great work!

    +Sampath Perera The Caribbean, particularly Trinidad and Tobago, has a large East Indian influence. East Indians were brought to the Caribbean as indentured servants when the African slave trade was coming to an end.

    Going to try this my channa never stay crispy when I put all my ingredients bandanya, pepper,garlic n salt after a day it get soft not crispy Kris what is the secret to get the channa crispy for a week or so 🙏🇨🇦❤️

    I love fry channa, but whenever I fry them, when cool they taste stale it don't have that crispy taste. What am I doing wrong?

    Make sure the oil is very hot . If not the Channa will just soak oil and not give the crisp crunch that you want. You can then lower the heat when all grains are in and just wait for them to float on this medium heat.

    I gave up on making it, I tried 3 times to make this using can chick peas, 1st time on a grill, half was soft and half was to hard, 2nd time was in a stove, most came out too soft after an hour of cooking, 3rd time was boiled in oil in a pan and they all came out to hard to eat, I would just rather buy it and ship it to my home, but I'm lucky because my mom is in TNT now and she will bring a few bottles at the end of the month.
