Episode 908: Mercado Madness | Rick Bayless "Mexico: One Plate at a Time"

“You are what you eat.” Brillat Savarin’s statement fuels Rick’s tour of the 21 de Noviembre market in downtown Oaxaca. We uncover the incredibly rich culture of the market and its role in the daily lives and meals of the locals. Mounds of tomatoes, chiles and cilantro inspire salsa. Fresh chickens inspire Rick to spit-roast chickens in his backyard grill. Baskets of black beans motivate a platter of enfrijoladas topped with chorizo. The amazing market day ends with a stop at Chaguita, a 200 year-old frozen ice and ice cream stand and a favorite of Rick’s for more than three decades. At home, Rick inspires us with his simple coconut ice and a deep-pink jamaica syrup.

    My daughter and her family lived in Mexico City (Palanco) for 4 years. I visited their mercado and it was one of the most amazing experiences I've had.

    I think you meant *Polanco.* With all honesty, you haven't met a Mercado if you haven't been to La Merced.

    Hey Rick, are there any homes for sale close to you, I promise to be a good neighbor of yours. Every time I make Charro beans I always go to your YT vid. I never copy the recipe, mainly because I just enjoy watching the vid, it makes me feel like I’m in a Mexico setting. Your receipts are the best. Thanks for sharing.     only recently discovered your channel and love it, even as a vegetarian. Italian kitchen rules, Thai is a new discovery but I also have always been intrigued by the Mexican kitchen. Unfortunately good quality ingredients are hard to come by here in the Netherlands. "Some" you won't even be able to find at all. And since I would love to taste some of the authentic Mexican dishes, perhaps I have to go there someday.

    Rick, I am a huge fan of yours. My wife and I enjoy cooking and experimenting with food, I wish my wife would watch your videos by herself, but she does not speak English, could you do some of you videos in Spanish.... I know you will have more fans after that.

    There's spanish channels cooking authentic and delicious like DE MI RANCHO A TU COCINA, a grandma from Michoacan, listed on Forbes magazine as one of the 100 most influential women of Mexico. When I say she cooks authentic I mean real with clay pots, old fashioned comal, no stove, no microwave, no oven, only a molcahete, metate, and perhaps at the most a blender. Now that's authentic.

    Rick: I wonder if you could ever make some recipes for people on a GERD diet - no tomatoes, peppers, etc. I love the taste of Mexican spices. But I can’t eat much of it.
