Use Marris Piper potatos when roasting. U don't need to put them on the wire rack. Just drain the potatos and put them back in the pot and put them on the cooker which will take off the extra moisture.

Ina asked Emily to make traditional English roast potatoes not a traditional English roast, it's right there in the title. That's why there's no gravy or Yorkshire pudding or all the other things people say are missing from a traditional English roast. Ina only asked right at the end if it was like a tradional English roast and Emily answered her vaguely, saying her English family would enjoy the meal, probably just to be polite.

I’m not a fan of potatoes but those did look wonderful. My grandmother mixes a little flour, and sometimes dried garlic and herbs together and rolls the potatoes in it gently before taking them for a quick flash in the pan and they come out very crispy but nice and soft on the inner. The only way I will eat potatoes really.

Looks lovely but us brits traditionally love our gravy made from the vegetable water ie cabbage/carrots etc not potato water as in one comment mentioned. With a roast and paxo especially with chicken which is sage and onion stuffing for those who may not know. If it had been roast beef there would be Yorkshire puddings to. But these days any roast could include Yorkshire puddings because we love them. A good roast is delicious.

I am from Northern England, and can explain the absence of gravy and Yorkshire pudding from the roast by Emily is because she is from southern England, who tend to not use gravy at all. Yorkshire pudding of course is from northern England 🏴󠁧󠁢󠁥󠁮󠁧󠁿

I'm from the south of England and we have gravy with every roast and Yorkshire pudding definitely with roast beef and often with other roasts. It's also served this way in pubs in the south so definitely not just a Northern thing. Given the name, Yorkshire puddings obviously originated in the North, but it doesn't mean the rest of the country hasn't wholeheartedly embraced them.
