I’ve never made egg noodles in my life and, up until now, I would have never considered it. After watching this video, I’m intrigued and may give it a try now that I’m old guy, with plenty of time, living in the tropics. Part of what intrigued me about this video is the kitchen and the background music. It took me to another place & time, which felt refreshing and familiar, far from the turbulent epoch we’re currently living through.

Thank You! I used to call my mother for this recipe. I never wrote it down because it always gave me another excuse to call her. She passed recently at 96 and I could not remember it today. Thank you Helen and Aunt Gay!

This brought back some great memories. My granddad was a chef and showed me how to make egg noodles when I was five years old. The only difference was he added pepper to the noodles. My grandmother said the same thing; "Don't skimp on the flour!"

My mom used to roll the dough into tubes and cut it. My job was to unroll each noodle. Very laborious. Her method is brilliant and looks so much easier and efficient!

I love her, she has skills and earned them in life! Im 64, can still remember my grandma making noodles, often. And I think she would pressure cook the meat for them, while the noodles dried on the plastic table cloth just for noodles, on her round oak table.

I know this video was posted 6 years ago but I needed to say this Tomorrow I'm making chicken noodles and I have no idea how to make homemade noodles. So I was browsing KZread and came across this video. I'm in tears. My grandma was named Helen we were extremely close. Her talent was cooking. She was the head cook at school for many many years until she retired. She past away 5 years ago. I still shed a tear everyday. Seeing this video makes me pretend that it's my grandma Helens noodles. Even more ironically her sister is named Gale and we all call her Aunt Gay!!! Haha. Wonderful video We also live in Indiana!!! Clinton Indiana! Wonderful little town.

You are one awesome lady 😊. My mother learned to make egg noodles the first Christmas that her and my step father were married. That Thanksgiving my stepdad looked around the table and asked “Where’s the noodles?” . I was 12 and we had never had noodle on a holiday. She learned how to make them from his mother and I still expect to see them on the table to this day even though my mother and stepdad are both in Heaven. 😊Maybe this year I will make these, because they look delicious and not too difficult to make. My mom and I would put towels on our kitchen chairs and lay them on the towels to dry. My mom was the best cook. We loved soup and I still do. In fact, I'm eating soup right now that. I mostly improvise when cooking and baking. Trying to eat more raw though other than my soup time. I crave comforting soup all year round.

My young cousin calls me from out of state - How did grams make her noodles?! So I find this video and share it with her... she calls me back a few weeks later saying thank you over & over!! Her young family loves them and they taste just as her childhood memories remembered back when grams made them! We had chix noodle soup, beef & noodles, and she made buttered parsley noodles with cabbage. Thank you for sharing this video! It brought great memories to my family...

I make mine almost same way but smaller batches. I like your ideal of letting the dough rest, then cutting into oblongs, stacking them, then cutting, never seen noodles done that way but believe I'm going to try this way on my next time making noodles. Thanks for a great video.

My mom recently told me my Great Grandma made noodles. She would roll it out thin and leave to dry. A few hours later she would roll up the entire dough tight, making sure it was dry and covered with plenty of flour. She'd then cut it as thinly as possible. She'd fluff them up and put towels on her bed and spread the noodles out to dry all day. My mom has her recipe but hasn't made them. The closest noodle I've made is Kielke. It's a thick short noodle that u cook the same day. It only needs to dry a bit before slicing. My Grandma would drape the strips over the edge of a bowl. We serve it with a fried onion cream sauce and Farmer's sausage. Delicious!

I'm 80 and I grew up eating hamburger noodles!!! Onions, celery and POTATOES. My kids loved it. I took them to a casserole lunch at work once and EVERYONE loved them. Wanted recipe but they couldn't get it right. You have to know how to make noodles, period. We ask used beef , chicken and deer. It's old fashioned cheap and delicious!!! These noodles are delicious in soups too

Good for you. My Gramma (c.1957 as I recall) was a crabby po"d bitch who never wanted to come to the US and often stated that she wished she was in war-torn Poland. What a moron. Never learned 5 words in English in the 50+ years she lived here. Never cleaned that grimy house in at least 30 years! My aunt had to go there and do that, and in the process, her first (gorgeous, rich) husband left her (he wasn't gonna waste his one day off going over there cleaning that filthy shithouse!) It was my mother who "outed" her 2 weeks after her (curiously tearless) funeral. Only my sucker dad, and my alcoholic uncle shed a tear. I was 8. I remember that funeral, clearly. The wake was fun!

I was a noodle roller but love your stacking for cutting because I cut mine thin also. I have gotten in a bad habit of hurrying through the process and it causes more problems in the long run. Slow and steady gets a better product.

I learned to make my Grandma's noodles from my Mother.We don't use milk.We add pepper though.I have mastered making them,I found a herb mincer(a cutting tool that consists of 6 small cutting wheels)That is the right width for noodles.I cook up chicken breasts in the crook pot,shred the chicken,add the noodles and nothing else.

I use a cool marble rolling pin. Just put some oil on it or Pam spray then flour. Isn't as hard to roll them out. You save time! Easy to clean and works really well even on pie crust. That is IF you can find them! Love the way you layered and cut your noodles! How easy!!!

FYI I did start out as a teacher, but in 1987 I became a small library director which turned out to be the best decision ever. In 2001 at the age of 60, I went back to college and received my Master of Library Science in 2003. We are in the process of posting pie making videos, if you are interested.

When I make them we call them Kielkia from German Roots. After we boil them we make sautéed onions and gravy sometimes cream gravy. The next day we can fry them up and eat them with ketchup. Both ways are very good simple meals.

good recipe but I always let my dough rest for a bit (1/2 to 1 hour) after I've mixed and kneaded it together. That way when I roll it out it isn't so tough and the noodles are softer in the end. Referencing her point about how much you handle the dough makes the noodles softer or more firm, I find the resting period ensures a soft noodle.

Me too. You can roll them out 1/16" thick too. Makes a nice delicate noodle or even a pierogi shell that'll be thin yet stay intact. I try to keep surface flour to a minimum. Makes noodles too rough and sloppy tasting. It's not easy to do. You have to dry them thoroughly then shake that xs flour off.

My grandma immigrated from Suchodil Ukraine. She really knew how to make noodles. She would roll out the dough on the kitchen table, dust with flour and roll a log. She then cut the log into noodles and cooked then in water until they floated. She removed the cooked noodles and let them cool, then stored them in the fridge.

My mom used to roll the dough into tubes and cut it. My job was to unroll each noodle. Very laborious. Her method is brilliant and looks so much easier and efficient!

You make this look so effortless. My 9 yr old helped me make egg noodles for my homemade chicken noodle soup. Needless to saw we were covered in flour by the time we were done. But it was worth it cause the soup was AMAZING
I love her, she has skills and earned them in life! Im 64, can still remember my grandma making noodles, often. And I think she would pressure cook the meat for them, while the noodles dried on the plastic table cloth just for noodles, on her round oak table.
I know this video was posted 6 years ago but I needed to say this Tomorrow I'm making chicken noodles and I have no idea how to make homemade noodles. So I was browsing KZread and came across this video. I'm in tears. My grandma was named Helen we were extremely close. Her talent was cooking. She was the head cook at school for many many years until she retired. She past away 5 years ago. I still shed a tear everyday. Seeing this video makes me pretend that it's my grandma Helens noodles. Even more ironically her sister is named Gale and we all call her Aunt Gay!!! Haha. Wonderful video We also live in Indiana!!! Clinton Indiana! Wonderful little town.

You are one awesome lady 😊. My mother learned to make egg noodles the first Christmas that her and my step father were married. That Thanksgiving my stepdad looked around the table and asked “Where’s the noodles?” . I was 12 and we had never had noodle on a holiday. She learned how to make them from his mother and I still expect to see them on the table to this day even though my mother and stepdad are both in Heaven. 😊Maybe this year I will make these, because they look delicious and not too difficult to make. My mom and I would put towels on our kitchen chairs and lay them on the towels to dry. My mom was the best cook. We loved soup and I still do. In fact, I'm eating soup right now that. I mostly improvise when cooking and baking. Trying to eat more raw though other than my soup time. I crave comforting soup all year round.

My young cousin calls me from out of state - How did grams make her noodles?! So I find this video and share it with her... she calls me back a few weeks later saying thank you over & over!! Her young family loves them and they taste just as her childhood memories remembered back when grams made them! We had chix noodle soup, beef & noodles, and she made buttered parsley noodles with cabbage. Thank you for sharing this video! It brought great memories to my family...

I make mine almost same way but smaller batches. I like your ideal of letting the dough rest, then cutting into oblongs, stacking them, then cutting, never seen noodles done that way but believe I'm going to try this way on my next time making noodles. Thanks for a great video.
I have used this several times to refresh my noodle making before I get started. She is lovely and what a treasure to have done!
My mom recently told me my Great Grandma made noodles. She would roll it out thin and leave to dry. A few hours later she would roll up the entire dough tight, making sure it was dry and covered with plenty of flour. She'd then cut it as thinly as possible. She'd fluff them up and put towels on her bed and spread the noodles out to dry all day. My mom has her recipe but hasn't made them. The closest noodle I've made is Kielke. It's a thick short noodle that u cook the same day. It only needs to dry a bit before slicing. My Grandma would drape the strips over the edge of a bowl. We serve it with a fried onion cream sauce and Farmer's sausage. Delicious!

I'm 80 and I grew up eating hamburger noodles!!! Onions, celery and POTATOES. My kids loved it. I took them to a casserole lunch at work once and EVERYONE loved them. Wanted recipe but they couldn't get it right. You have to know how to make noodles, period. We ask used beef , chicken and deer. It's old fashioned cheap and delicious!!! These noodles are delicious in soups too

Great job! The only person I ever saw cut noodles was my mother. She rolled up the dough sheet into a log and cut them.

Good for you. My Gramma (c.1957 as I recall) was a crabby po"d bitch who never wanted to come to the US and often stated that she wished she was in war-torn Poland. What a moron. Never learned 5 words in English in the 50+ years she lived here. Never cleaned that grimy house in at least 30 years! My aunt had to go there and do that, and in the process, her first (gorgeous, rich) husband left her (he wasn't gonna waste his one day off going over there cleaning that filthy shithouse!) It was my mother who "outed" her 2 weeks after her (curiously tearless) funeral. Only my sucker dad, and my alcoholic uncle shed a tear. I was 8. I remember that funeral, clearly. The wake was fun!

I watched my mom make noodles in a similar way for years growing up. She did use the newspaper method. I can tell Aunt Gay must have done this a thousand times. She has the same motions my mom had. I'm going to make them right now.
I was a noodle roller but love your stacking for cutting because I cut mine thin also. I have gotten in a bad habit of hurrying through the process and it causes more problems in the long run. Slow and steady gets a better product.
I still read from a newspaper, and I'm 17. This is one of my favorite noodle recipes by far!

I learned to make my Grandma's noodles from my Mother.We don't use milk.We add pepper though.I have mastered making them,I found a herb mincer(a cutting tool that consists of 6 small cutting wheels)That is the right width for noodles.I cook up chicken breasts in the crook pot,shred the chicken,add the noodles and nothing else.

I'm a little crazy. I have my own heirloom recipe that I always use, but I still enjoy watching others make theirs. Good job, they look wonderful.
I use a cool marble rolling pin. Just put some oil on it or Pam spray then flour. Isn't as hard to roll them out. You save time! Easy to clean and works really well even on pie crust. That is IF you can find them! Love the way you layered and cut your noodles! How easy!!!

FYI I did start out as a teacher, but in 1987 I became a small library director which turned out to be the best decision ever. In 2001 at the age of 60, I went back to college and received my Master of Library Science in 2003. We are in the process of posting pie making videos, if you are interested.

When I make them we call them Kielkia from German Roots. After we boil them we make sautéed onions and gravy sometimes cream gravy. The next day we can fry them up and eat them with ketchup. Both ways are very good simple meals.

good recipe but I always let my dough rest for a bit (1/2 to 1 hour) after I've mixed and kneaded it together. That way when I roll it out it isn't so tough and the noodles are softer in the end. Referencing her point about how much you handle the dough makes the noodles softer or more firm, I find the resting period ensures a soft noodle.

Me too. You can roll them out 1/16" thick too. Makes a nice delicate noodle or even a pierogi shell that'll be thin yet stay intact. I try to keep surface flour to a minimum. Makes noodles too rough and sloppy tasting. It's not easy to do. You have to dry them thoroughly then shake that xs flour off.
I've watched nearly a dozen videos on how to make noodles. Yourz is my fav!

My grandma immigrated from Suchodil Ukraine. She really knew how to make noodles. She would roll out the dough on the kitchen table, dust with flour and roll a log. She then cut the log into noodles and cooked then in water until they floated. She removed the cooked noodles and let them cool, then stored them in the fridge.
