Home made noodles the way Grandma made them!!

Here is a video of how i make homemade egg noodles the way my grandma taught me. hope you enjoy!!

    When you cut the dough into four parts the beautiful yellow color made me want to dive right in. This was the best video ever on noodle making. How simple it is to remember a two to one ratio. Thank you!!!

    Thanks for the informative video. This was my favorite meal but mom always used a fork and made a hole in the middle of the flour. Then she put the eggs in the middle and turned the eggs around in the hole, beating them as she did. She rolled them up like cinnamon rolls and cut them. Never kneeded it, just let it set. Thanks for the memories. ☺

    We have always had chicken and noodles over mashed potatoes for all holidays and birthdays! One of our favorite dishes. Thanks for sharing!

    Roll it up like a cinnamon roll. Then gently cut or wrap thread/floss around it to cut. Sounds like a great recipe. Will try it.

    Take a tip from an Italian. When making pasta/noodles it's much easier to spread your pasta/noodles out on a clean sheet(we have sheets we use just for pasta)spread out over a large surface(table, counter, even a bed, that's what my grandparents always did. I've even seen them use a sheet bridging two tables and held in place with jars of tomatoes, spread the pasta out on the sheet and put a fan underneath to speed the drying process.

    My grandmother always draped them over the backs of her kitchen chairs - after cleaning them, of course.

    Wipe the counter with a really wet, clean sponge. the plastic will stick.

    You know as I watch you start this noodles.. I think this very tasty one I ever see that most fluid is eggs as it's boiled to cook it the taste will stay .. unlike basic flour .. salt some one egg or two I think same flavorless noodles that taste flour or start ...     These look delicious, will definitely make them, much better than bought. If you put water on your countertop before you put down the mat it won’t move or you can put a wet tea towel under the mat or if you use the thin rubber shelf liner from Dollar Tree under the mat it won’t move. Depending how slippery your counter top is you might want to use a bit of water with the shelf liner, a spray bottle is great for this.

    Put on disposable gloves, forget the spray... it has too many weird chemicals, or use Grapeseed oil, or Olive Oil. Letting it REST is to let the gluten Relax so it is less elastic when rolling out... that is it will shrink back each time you roll it out which is defeating your efforts so that is why you Let It Rest.

    I don't even see the point of putting oil on at all, it's not as if her hands were non-stick afterwards were they.simply use a butter knife to cut the dough in until you have ragged dough and then use your hands and avoid most of the sticky stage.

    Silicone mats are great to use... Will be trying your recipe for chicken noodle soup...thanks for sharing 😊... one question how do you freeze these... do you just put them inside a ziplock or do you layer them with parchment in between then put inside a ziplock? TIA

    Next time you make them put a dish cloth under your mat it stops your mat from moving.

    I made them and let mine out to dry and they turn black. And that was just during the day and overnight so I guess I don't understand on how to let dry right

    I have all the juice left over from a beef roast in the crock pot. I tried homemade egg noodles once before but I didn't get them rolled thin enough (no experience rolling doughs, marble rolling pin) or cut them narrow enough, so they were more like planks, tasty planks though lol So I'm trying round two, with a new wood rolling pin, a new video and instead of trying to roll on plastic wrap NO or parchment NO or tin foil NO I'm going to roll them straight on the cleaned & sanitized countertop. (I'll be keeping my eyes open for a rolling mat) thanks for a great video.

    If you put gorilla grip ( or any brand ) nonadhesive shelf liner under your matt it will not slip...

    My grandma used to put lots of pepper in her noodles (?dumplings?) AND put them in directly .. and yes, they rose to the top of the boiling broth. Boy they sure were good .. I'm vegan now so will have to find something else to use .. but thanks a bunch for showing me our grandma's way of doing things. 🌹

    APF. If you happen to use SRF, your noodles will puff like dumplings.

    Ive seen 1 egg to 1 cup flour. Yours is 6 cups to 12 eggs. So 2 eggs to 1 cup flour. Anyone know differences ?

    She just made a bigger batch. 2 eggs to 1 cup of flour probably makes them a little richer! Also. the 2 eggs may change to texture some. Gonna try both ways! : )

    I cook for my family every day, and my polish is usually chipped. It happens. Nobody has died from eating my food. I didn’t die from eating my grandmother’s food, either.
