I've made noodles for years and I'm telling you, it makes an average dish into something wonderful! My grandma put a cup of flour on the counter, cracked an egg into the flour, put a dash of salt into that and actually used her egg shell to get a half an egg shell of water. She mixed it with her fingers on the counter and then rolled them out adding flour as needed. Anytime or anywhere they became sticky she added flour. I use a bowl because it's easier for me but there is no right or wrong on making noodles and once you have the homemade, forget store bought!

My grandma used half an eggshell of water as well. She also had special dishtowels she covered them with just like she says in the video.
