    I was one of those people who struggled with the last pizza before sticking with it and finally getting it right. I ended up just lowering the water a few grams which allowed me to finally be able to work with it the way you were showing in your video. Now my wife, kids, and me eat it once a week. Yo mina! I've done this a couple times now (shaping the dough in my skillet first to brown the bottom before plopping it into the air fryer to bake) turned great every single time. I've got a question for curiosity sake, the old pizza video the recipe you used a 75% hydration and only 1% for the yeast. Here you are using 80% hydration but 2% yeast. Why the higher hydration? (I'm guessing the higher percentage of yeast is because this is a no knead method) but i was considering lowering the water percentage for a more sturdier dough (70%) but i wasn't sure if i lowered the water percentage would i needed to knead it a bit more or use less yeast?

  • @MinaAyoubChef

    @MinaAyoubChef

    2 жыл бұрын

    In Air fryer…nice! Yeah I upped the hydration since it’s no knead and gets you a better crust and macros. If you lower it just use slightly less yeast it’s not a huge deal

    @@MinaAyoubChef yup, Crispin the bottom in the nonstick pan first for 3-5min putting toppings on and you can easily lift the pizza and i shove it in the air fryer 200°c for 6-8min once the bottom starts to harden and brown It no longer sticks.(using this method i suppose you are limited to the size of your pan, it's also super easy to make a thick crust this way). I did have one more question though. Can you prep and store this type of self rising high hydration dough in the fridge for a day or two-week? And if you can at which phase would you put it into the fridge? After mixing? Or (30min) after the first stretch and fold method? Or the third time where you're supposed to shape it in the pan? Can it be stored covered at room temp for a day? Or would it be best to approach this as an overnight rise thing pulling the dough out 12-24h after and letting it rise in the after shaping it for a bit? (I'm asking because this recipe is extremely budget friendly so I've been making it after post workout after a long day of school but sometimes I'm pressed for time and can't sit and wait or sometimes I've got the dough ready but plans come up and i don't eat at home)

    I saw your video on the fat free cheese. I wanted to share something I saw on tiktok. Someone said to soak your cheese in water for 10-15 seconds, drain the water, and it will melt like normal. IT WORKS! My personal theory about it is that the anti caking agent in shredded cheese (like the fat free cheese) doesn't allow it to melt correctly. Thus, soaking the cheese is removing that agent and allowing it to melt. I have 0 evidence to back that up, I'm just assuming based on the factors.
