Kuru Fasulye & Pilav
Servings: 2
Difficulty: Easy
Cooking time: 10 minutes
Prep time: 5 minutes
Ingredients:
For the Pilav:
1 tablespoon of butter
2 tablespoons of olive oil
2 tablespoons of vermicelli
1 cup of rice, soaked and drained
1 pinch of salt
1+3/4 cups of boiling water
For the Kuru Fasulye:
1/2 onion, chopped
1.5 tablespoons of butter
2 tablespoons of olive oil
50 g of sucuk, sliced (you can use any cured meat)
1 clove of garlic, sliced
1 green pepper, thickly sliced
125 ml (1/2 cup) of tomato puree (you can use tomato juice or passata)
1.5 pinches of salt
1.5 pinches of black pepper
400 g of boiled or canned white beans, with cooking water.
Instructions:
For the Pilav:
In a small pan, add the butter and olive oil, and brown the vermicelli.
Add the rice to the pan, continue to sauté, and keep stirring. Be careful not to roast it too harshly, as this may release their starch and cause the rice to become mushy.
When the rice turns transparent, add the boiling water to the pan, give it a mix, close the lid, and place the pan on a low heat burner. Simmer until all the water is absorbed, then turn off the heat. Let it rest for 5-10 minutes.
For the Kuru Fasulye:
In a small saucepan, add 1 tablespoon of butter and olive oil, then sauté the onions.
Once the onions are cooked, add sucuk, garlic, and green pepper to the saucepan and stir.
Pour in the tomato puree, add salt and black pepper, and when it starts to boil, add the white beans with the cooking water. Stir well.
To make the "kuru fasulye" brighter and more delicious, add a last-minute pat of butter and a pinch of salt and black pepper.
When everything is ready, transfer the pilav to a dish and add the delicious "kuru fasulye" on top of the pilav. You can enjoy this dish with some pickles and a teaspoon of mustard.

Because of your channel, I now always have the Turkish tomato paste and the hot paper paste in my kitchen. And bulgur. 😃
Thank you Refika, the price of food is just so scary these days. I really appreciate what you are doing. Many thanks!

Linda here…I love everything you do! These quick, inexpensive meals are awesome! We live on a sailboat in the Caribbean and beef can be expensive and difficult to find. The animals they raise are very lean, too. I love the idea of vegetation dishes that can be seasoned with meats. Our “kitchen” and refrigerator is so small that most of my time is spent provisioning and prepping for meals. I have to have everything prepped before I can start cooking. I often prep carbs like potatoes, rice, beans the day before and refrigerate for the benefit of resistant starches that will raise blood sugar less. Also, the heat can be unbearable in the summer and I often don’t cook…just salads and non-cooking dishes…perhaps you could look into that? Thank you so much for all you and your crew do. You’re all a lovely group and I get so much joy from watching and sharing your videos.
My 4yo clapped for you at the end of this video, I promised him I'd tell you! We're definitely going to make this
One of the things I love about Turkish cuisine is that yogurt is served so often with many of the dishes. I used to eat it only at breakfast, but now I enjoy it throughout the day and savory as well. ❤
This is such a delicious comfort food, haven't met anyone in Türkiye who doesn't love it! And with pickles yum yum yum!
Hi Refika and family. This is a great idea. Turkish food is so perfectly balanced between healthy, filling and economical
I totally love how you don’t waste anything, Refika. I sometimes feel a little crazy because I always am running outside dumping my rinse water on my plants when I’m cooking and secretly burying my vegetable scraps through my yard. I live in an HOA (which I know would freak some people out, and they might try to stop me from gardening altogether). I just hope more people around the world catch on before it’s too late for everyone.

What is a HOA?

I'm sorry you have an HOA with such rules 😮 I thought they were only for really rich people, but I've heard in some places, nearly all the available houses are HOA. It's hard when you are doing good, frugal, ethical things like planting scraps or drying on the line. My neighborhood gets a little shabby at times, but we have yards with art projects, big gardens, and all kinds of unique displays reusing "junk," which I love.

Thank you so much for this series! Feeding a family on a small budget is hard, so this is fantastic :) Lots of love to you and your team from New Zealand ❤
Thank you Refika, Bahar and Team. Great series, and yes, we need all the suggestions you can give us for affordable meals, life is increasingly difficult for so many of us all over the world. I also like the idea of a meal that can go for a few days, or any tips for conservation. Thanks Refika for all you do, with your great heart!
I make this often, my husband is Turkish. I love it rich like yours. I put potato in too and no meat. My mother in law makes it very bland I don't like it much. Big dolop of yoghurt on top and crusty bread. Yum
This was great! I made this for lunch today. It was delicious and I even brought two servings over to our elderly neighbors. Thank you from Idaho, USA.

I love that you offered this to your neighbors. This is also part of the Turkish culture but we keep forgetting about our traditions. 😢
I miss cooking with my kids. I had 4 and needed help cooking enough for everyone. Especially egg rolls and pierogi. We loved them so had to make a lot.
Loving these new series! Would love to see breakfast and quick picnic ideas on these series! But always with the notion or theme of “bereket”
7:03 Love your videos. Don’t forget to mention putting a towel over the Pilav and letting it rest. In America that is Nora thing but my I learned it from my Turkish wife and WoW it makes a difference. Keep up the wonderful videos!!!
I'm loving this series. Great idea! I haven't been following long, so I have a lot of catching up to do. A lot of doctors recommend a Mediterranean diet these days, and your recipes make that seem a lot more appealing and not so intimidating.

Refika and team make amazing recipes and they are all delicious and very doable. Enjoy binge watching and making Refika's recipes!
Love the idea of low cost, high value. My husband and I would like to have more rustic, healthy ideas. New tastes and textures. We are seniors and chefs, but not familiar with Turkish cooking. Looking forward to the new series.
My Lebanese Granny always made rice and vermicelli and our family makes it as a staple. I haven't tried it with anything else. I will try these recipes. Thank you.
Dear Refika and team, you are cooking while promoting self-awareness which is formidable❤. Keep up the good work ❤ Real cooking with purpose 😘
Thank you for starting this series Refika🥰This dish is my American husband's favorite Turkish dish (of course with sujuk)😁
Thank you too Refika, you have great ideas for us. Most of us have all you used in our pantries but not the way you presented it to us.Thank you so much for schooling us on ways to make great dishes from what we can afford. I love this new program, it will help me stop repeating the same bland insipid dishes. Thanks for sharing, lots of 🥰🥰🥰🥰 to you & your crew family. Be blessed as always 🙏🏿. ✌️&❤️😄🤗.
I love how in touch with reality your show is. Instead of some 20 step expensive dish with tons of hard to get ingredients you are cooking so we can make new dishes at home. We love your heart. Keep up the good work.
I love this series. Thank you for pointing out food prices are higher globally. Sometimes in the states we forget how good we have it. ❤

You don't. Food in the US is very expensive, certainly compared to Europe, almost everything. And the there's the poor quality. Take a few minutes to search youtube for US food price comparisons with the UK for instance.

@@jonathanfinan722 I live in one of the most expensive markets in the United States. However, there are always deals to be found. We also have such variety and abundance. Other parts of the world have been struggling for decades. The increases in the United States are in line with the increases seen globally since Covid. Especially when you subtract the fact that large box supermarkets are price gouging their customers. Seek out small ethnic grocers and you will find the true cost of food in the United States. You will find prices per pound on produce, meat and fish that you won’t believe. Or perhaps I misunderstand you. Are you saying the US doesn’t have it good. I’ve traveled extensively and trust me. It’s good here. You don’t have to feed your family junk food. That’s a personal choice.
In my city in UK a Turkish restaurant just won an award for best in their category which I thought was pretty cool.
I ❤this idea for a series (Easy, Tasty, Healthy and Budget Friendly) The food looks delicious and will be making it this week - thank you for sharing!
I cant have more than 1/4 cup of whole beans, but love the ideas & learning more about Turkish food! Its one of the best cuisines ive ever eaten, even tho ive only had turkish food twice lol! Thank you/Teşekkürler! I've watched many of your videos, but this is the first dish I've made. It was so easy I had to try it. I love a simple, cheap dish. It tasted really good and the butter to finish was perfect. I had to sub orzo for vermicelli. I followed the same directions and it turned out well. I also added a few extra beans to stretch it for 3 and ended up with a full extra 4th meal!
Thank you so much for sharing and all your wonderful tips. I just soaked my chickpeas for falafel and it's going to be the second time I'm going to make it. Lots of love to you all from Rene here in South Africa, Cape Town ❤
Thank you ....for the good ideas

I love this series! Please give us more easy meal ideas ❤
I must try this! Love your work 😀
Perfect theme for the times 👍👍
Simply brilliant as always! You're amazing Refika❤
Thank you for this! I adapted it for my food sensitivities and it still turned out amazing! It made 5 servings so I have one each day for work. I'm eating it right now for lunch! 1) Used all olive oil, different brands to change it up. No dairy. 2) Instead of sausages I broke up left over meat from bacon beef burgers. 3) Instead of wheat vermicelli I broke up dry rice (with bran) spaghetti noodles. I've never fried pasta before and I can eat that as a snack! It's delicious! 4) Used parsley, cayenne, mustard, and tumeric for flavor.
Great recipe. Thank you❤
Love this kind of recipes! Good to have vegetarian option as well. Maybe an idea is to make Turkish style bento box?
Fantastic recipe, dear Refika! Favourite food combination of my late grandfather. Thanks for reminding me of my childhood.❤
Thankyou for this sharing this recipe and I love the idea of economical meals. I made this one today and subbed in soy curls for the sausage. I also added in parsley and cilantro from my garden. It was really good. Thank you
This recipe is so easy and tasty. I made it with andouille because that’s the sausage that is available here in mid-Missouri. I will definitely make this recipe again!
Love you and your team also the most important your recipes ❤
I'll cook this today 😊

I have heard about green beans with rice from Turkish cuisine i think the dish name is Dible one of my favourite ways to use leftover rice what variations of Diblesi you have? I think tursu is good but i like the idea of mustard in dishes i know that in tursu you add hardal have you ever tried it in Indian style dishes?
Love it!! ❤❤❤
Hello Refika, from Toronto Canada 🇨🇦 ,l have been following your recipes,+ I have tried a couple of them ,all very Tasty & healthy . I like your friendly nature . Lots of good wishes ,& 🙏❤️
Yeah, the prices of commodities have skyrocketed since the pandemic. I also make beans that way adding prosciutto cotto cubes accompanied by plain rice. I am not fond of excessive use of oil or butter. Thank you, dear Refika and the whole team❤
Will definitely try this, thank you!! Suggestion: a Turkish breakfast bean recipe.
Deliciousness ❤
Yum yum 😋 I love Turkish food 😋👌🏼
I just put some white beans to soak overnight. I am currently eating white beans and rice with tuna!
Ah lovely - certainly a mouthwatering dish, to say the least! It's a wee bit like the vegetarian dish, 'Rajma-Chawal'(which translates to red kidney beans and rice) that we make back in India! Love your channel, your recipes and you! Thanks for whipping up tasty, delish recipes episode after episode - truly enjoyable, both to watch and try out. Best regards all the way from New Zealand.
