A lot of the times the food content creators prefer pouring the hot oil over raw garlic to make that chilli oil. I did that once and I learned the hard way to never do that because the garlic doesn't cook all the way through and then it becomes too spicy to eat. So I really liked when you fried the shallots and the garlic first before making the chilli oil. The frying actually brings out the flavour of the garlic, it's a much better technique

POSSIBLE SUBS: curry powder = cumin (or turmeric combined) cilantro = parsley / thai basil (purple stem don't mix it up with the basil you add to italian food) shallots = red onion oyster sauce = hoisin sauce (reduce the amount of dry sugar if using this) Don't like those? Google is your friend. Modify to your own tastes.

Just tried this following the written recipe in the beginning. Came out bomb and I did a soft boiled egg while it was with the noodles. Will be adjusting to add more chili powder, less curry and less oil as well. I think i accidentally did a hair more than 1/4 cup lol. Definitely keeping this in the back pocket though. It’s not like something I’ve had before but damn I want it again lol. Dumping the hot oil on the cilantro and spices is kinda dope lol

Stir fried it with pinch of salt, black pepper and chili. While mixing everything together i added the chicken mixture. It was truly delicious. Today i will try it with steak. 🥩

I think you have a different type of cilantro, here in my country ,we usually have cilantro with a nice smell, but during High school i was in a hostel and the Restaurant there have something called "Japanese cilantro" the leaves we're so much bigger than the ones I'm used to, and i thought it'd taste Better lmao 😂 Tastes like kerosine oil or like the taste that you feel in your mouth when you accidentally get soap or hair oil in your mouth 🤮.

You can just leave it out. You don't actually need the flavor of cilantro. Spring onions are a completely different flavor but will work well in this recipe. Personally these noodles don't have much nutritional value for me so I would put some baby spinach in it or some other vege. We all have different tastes and preferences but it's an easily adaptable recipe.

If you don’t like the taste of cilantro, just leave it out. Or use chopped green onion for colour. Maybe thai basil for another dimension?

Just saw this today & made it as a side for dinner. Thanks for sharing. I was missing a couple of ingredients but substitutions worked: Spaghetti for the noodles (I do this a lot for noodle dishes)!😅 Sesame Seed oil instead of Oyster sauce and Cumin instead of curry and I mixed it in the skillet instead of a bowl. It was delicious! Slightly dry but I added a bit of broth from my Rotisserie chix & it was perfect.

If its for a vegan restriction, experiment with various amounts of vegan hoisin sauce, tamarind or molasses. More soy sauce also works.

I made it. Problems : I was serving for 2, so I put 2 clumps of noodles in, but I thought the rest was like served for 1 person because there was only 1 bowl. So I put double the sugar, double everything, and it turned out too sweet, and wayyyy too spicy. My dad was like : 😅 Edit : I've just realised that nobody will ever like my comment Edit 2 : NO WAYYYY I GOT 1 LIKE Edit 3 : NO WAYYYYY 2 LIKESSS Edit 4 : NO WAYYYY 8 LIKES
