▣ Earl Grey Swiss Roll Cake Recipe|Ohyoo Cooking
▣ Ingredients:
Custard sauce
Egg yolk 18g
Sugar 20g
Cake flour 4g
Corn starch 4g
Milk 105g
Salt 0.2g
Vanilla paste 2g
Unsalted butter 8g
Cake body:
Unsalted butter 40g
Cake flour 45g
Earl Grey tea powder 5g
Egg yolk 75g
Egg white 25g
Milk 20g
Egg white 150g
Sugar 58g
Filling:
Heavy cream 180g
Sugar 8g
Custard sauce
▣ Baking:
180°C/356°F for 16-18min
▣ Method:
1.Make the custard sauce, stir the egg yolk and sugar until the color becomes lighter, then add the sifted cake flour and corn starch and stir well.
2.Pour milk into a pot, add salt and vanilla paste, heat until slightly boiling, pour into step 1, stirring while adding.
3. Pour the liquid back into the saucepan and heat until thick and bubbly.
4. Take out the cooled down custard sauce, add the whipped heavy cream, stir well and set aside in a laminating bag.
5. To make the cake body, pour the butter into a saucepan and bring to a boil, then remove from the heat.
6. Pour step 5 into a bowl, add the egg yolks and egg whites and mix, then add the appropriate amount of milk to adjust the consistency.
7. Whip the egg whites and mix well with the egg yolks.
8. Pour into the mold, gently spread out and bake.
9. Remove from the oven and let cool. Spread with cream and custard sauce, roll up and refrigerate for about four hours.
