Sfoglia Lorda means 'dirty pasta' in Italian because only small amounts of cheese filling is used. Gisela also calls it 'pasta lorda'. This is a quick and easy way of making ravioli, which are poached in a meat broth; Gisela makes shows us how.

    Gisella is my daughter's Italian nonna. We live inAustralia when we are visiting she always keeps Alessia on the kitchen with her for a couple of days to reach her traditional cooking. I PROMISE you this is even better than it looks and she is a master of all pastas. WE LOVE YOU NONNA GISELLA!

    La pasta Lorda nasce perché non tutti si potevano permettere pasta ripiena con carne Un tempo piatti per ricchi . E quindi si faceva la pasta lorda dove con Un ripieno semplice fatto di profotti semplici e con poco. Riuscivano a farcire tutta la sfoglia . E portar a tavola una quantità per tutti. Era la pasta delle feste E che faceva famiglia. Brava.

    I just discovered your channel, and I am in love! Wish there would be more recipes that feel like real home cooking, just like that, without measuring out every ingredient. This is how our grandmas and mothers have always cooked. Keep up the good work!

    I really appreciate these videos! You seem to enjoy your work documenting all these recipes. I didn't grow up with a grandmother and sadly my children will not grow up with one either. These videos are not just good recipes but pass down a part of a good heritage which is lacking in families like mine. God Bless You!

    "Pasta lorda" because the squares are not perfectly closed and the filling 'dirty' the broth making it opaque. In the homes of my relatives in Parma it is called "pasta sporca", which is the same thing. But the cut is made with the knife.

    That looks brilliant! Though my nona taught me that it’s absolutely illegal to have an eggy filling with an eggy pasta dough! I see now it’s not as bad as she made it to be!

    Weighing more important in cakes where chemical reactions occur. Ever notice a packet of yeast can work equally well for one or two loaves? Bread and pasta more forgiving ad its all in the knead

    What happens with meat and veggies from the stock pot? Would be lovely to get more recipes for a full family meal, as.. yes what happens with this meat and veggies? They may have amazing dishes we know nothing about! Thanks for bringing us this educational, entertaining, interesting and cultural content. Its like taking a trip to Italy!

    Hello Fluro, I'm delighted you enjoy the channel. The meat used to make the stock is eaten as a main course - perhaps you have heard of 'bollito misto' a mixture of boiled meats which is served with salsa verde. best wishes, Vicky

    The most easy thing is making a soup out of it: Cut everything (meat, vegetables) into small cubes, add some fine pasta (e.g. Capelli d’angelo) - ready. I usually do that if I have no idea what to do else with the remaining stock pot.

    The stock cooked veggies are spent but i often add the carrots and a bit of stock to my dogs dinner bowl. Why use a bxed pasta? Go on...make your own. You’ll never go back

    wonderful! Could you substitute ricotta for the campagnolo or goats cheese? or would that compromise the dish? Smashing recipe; I love the meat broth simmer... Cheers Tony

    Ricotta is exceedingly low-fat and is curdled at high temperature (85°c) and not melt again.

    Hello David, audio is a challenge. We film in real time (ie no rehearsals, no repeats of sequences) in very small kitchens with quite a lot of people chatting. or it's outside (like the latest episode) and cars and lorries thunder past. Or I'm asking second camera to do a close up. The kinds of noise you would find distracting if I left them in. So I commissioned some music which I hoped was quietly jolly and not intrusive (clearly not for you) to give a kind of icing to the cracks in the ambient sound cake. Best wishes, Vicky

    Thanks for your reply Vicky. I LOVE your videos. But the music is a bit distracting for me because it is so repetitive (with constant tapping). Maybe another musical selection? For me, the Great British Bake Off is a great example of appropriate ambient background music -- it enhances and doesn't intrude on the action. Either way, I will keep watching your outstanding videos.

    I used to find music distracting and annoying and repetitive as I usually watch ASMR cooking as it helps relax and help with migraines. But ... I fell in love with these grannies, this cooking, this channel ... and now I actually love the music. I know as soon as it starts I get happy because I know im about to see something impressive and amazing. I'm trained by the sound... that sound means.. *a grandma is about to blow my mind with her cooking*. And this channel probably doesnt have finding like Gordon Ramsay..so they do what they can..but I find the actual information, characters, culture makes up for """lack of highly expensive tv production". The channel is actually quite a lot like the food... simple, elegant and beautiful. No need for expensive beautiful fakery which is full of emptyness. This channel is warm and oozes love just like pasta grannies cooking. I think it really suits. Visiting mountain rural area where they use lard and make polenta... filming real people, real dishes.. filming feels real. As if I was there experiencing it. I feel like I have contact with grannies and pasta. I think this channel is different thy hen most others and its unique and I really appreciate it. Sometimes I really love fact it's short videos to give me inspiration and general idea of what to cook. But other times I wish it was longer like asmr where grannies would talk more so we would feel like we are more part of the process..as if we were there. But I think educationally, short videos are amazing! But yes audio isnt huge budget but I think it goes right for this style of cooking and visiting grannies and down to earth regular families. Its natural filming, for natural cooks, natural food, natural audience. I think upbeat music also shows how Italian people are upbeat and ambitious about their food. Zest for life, zest for cooking.. these grannies cook better food then is served in many counties in beautiful jazzy cafes and restaurants with fancy music and all fakery. This is the real deal. Shows real Italy, real Italians. I think filming is perfectly ok for this channel. I don't think Italian grannies would approve of some relaxing jazzy music to go with their style of cooking or food. Music must match grannies passion and food and their houses and environments. Rustic in nature sometimes visiting farms..

    How can the pasta stick without letting the filling escape? When making ravioli, i make sure to place dots of filling on the pasta sheet and, usually, the 2 layers of pasta don’t stick well together where there is filling

    00 flour refers to how finely ground the flour is - it's like talc. Outside of Italy, plain or all purpose flour (around 10% gluten) is an acceptable substitute. best wishes, Vicky

    In Italy is also called "farina d'Ungheria", used for pastry making. I use wheat flour 1 or 2 (not 0 or 00). The numbers indicate the degree of refining of the grains during the milling operations. 2 is near to wholemeal.

    hi Anna, good point - that's true of a professional kitchen. I take mine off when kneading dough, but when you are in your own home and it's you that's going to eat the pasta - then it is your call whether to wear your wedding ring? best wishes, Vicky

    I thought lady cooking was quite beautiful and feminine. She looked stylish and maybe dressed up for the filming or that's just how she is naturally. I'm sure her kitchen and food a hygienic. She looked like a pro with skills while looking gorgeous. I love watching these videos and every woman is beautiful and unique in their own way. I'm sure this woman cooks all the time and hasn't poisoned anyone. And yes cooking at home is different then for a restaurant. I loved cooks earrings and she looks comfortable and natural.
