Discover a sweet & savoury ravioli dish called cavajuol | Pasta Grannies

'Cavajuol' is a mixture of sweet, ricotta-filled ravioli and fusilli pasta, served with a savoury tomato sauce and plenty of grated pecorino cheese. It is from a tiny hill top town called Sant'Agata in Puglia, southern Italy. The addition of sugar is a legacy from the when the Arabs were present in southern Italy many centuries ago. Antonietta and Maria Carmela share the task of making this dish.

Delicious looking! I remember about 70 years ago seeing my Nona make ravioli for little me, although she made enough for everybody, I knew she made it because I said, Nona will you make ravioli for me? I still love my Nonna though she left us at age 96 which was a long time ago. I can see my Nona making the well and putting eggs in it and then go round and round around until magically there we were with dough. Nice to see this . It made me smile.

The pasta making here is so precise - it is so BEAUTIFUL! There is so much love and respect for food among these beautiful ladies!
That is Glorious food. Incredible pasta craftsmanship. I love the dishes that incorporate two different shapes of past. So beautiful.
This makes me wish I had an Italian grandmother so that I grew up with these awesome pasta dishes, and to teach me how to cook 😭💕✨

I appreciate that, Vicky! I'm flying to Torino this week and will be visiting for 5 days with a day trip to Milano. I'll be spending my time visiting bakeries, trattorias, and outdoor markets working on recipe research while I'm there. What a fantastic recipe and i love the taste and texture of the pasta. A little tip for those who may be like me when making fresh pasta, the pasta grannies make it look very easy to mix your eggs in a well of dry flour, and if you are new to that technique you may have to make a few recipes that way before you get the hang of it. Otherwise, you may have flour spread to thin everywhere on the board or a gap in your flour where the egg may start running out, but of course there is always the possibility that you will get it right the 1st time, right from the get go. my great grandmother would make homemade raviolis and great aunt who just passed away at 102 was still making homemade italian so I am really looking forward to trying to replicate their dishes with help from your wonderful channel

Also, as much as i love the ravioli, i love the macaroni thickness and tenderness texture even more, i do not know why, i just do, and i'm probably in the minority on that opinion.
I'm absolutely baffled by the sweet and savory combination going on here. @Pasta Grannies, how did it taste?

Not as alarming as you might imagine; the sweetness is kind of okay with the tomato. This style (or seasoning) of ravioli is found across a belt of southern Italy - I thought it was a local peculiarity when I first came across it but not so, best wishes, Vicky

Could u share the quantities she uses for this dish ? Lovely channel by the way. Since 1925 on Christmas my family has been doing a chickrn capelleti traditional recipe from Sicily from scratch. they even have a special day to kill the chicken for the filling it is very yummy.

hi Garo, the 'ferro' should be a square sided piece of metal about 2-3 millimetres thick - eg a skewer could be a substitute. Originally women used reeds, or straight pieces of twigs. best wishes, Vicky

Hello A Lee, sorry you couldn't hear the names: it's an approximate 50/50 mix of semola flour and 00 soft wheat flour called grano tenero in Italian. best wishes, Vicky

hi Christian, yes it's interesting isn't it. I thought adding sugar to the ricotta was a local oddity when I filmed this, but actually it's found across southern Italy. Sugar used to be wildly expensive, so this would have been a great treat. best wishes, Vicky

I’ve been following your channel and have been replicating a lot of your pastas from my apartment during the lockdown. A huge fan of witnessing all of these fascinating regional variations that you do not see represented in so many restaurants. Thank you for your excellent videos! They are a bit unwieldy to post. I'm chatting with the kitchen chap who made mine about designing one, but how to get it to the US's 7th largest city... your best bet is a local carpenter - which is how the majority of Pasta Grannies would have got theirs. best wishes, Vicky
