Watch 95 year old Rachele making 'maccheroni a descita' | Pasta Grannies

A special edition this week with another 95 year old Granny, Rachele from a tiny village called Sant'Agata in Puglia. She is making, with the help from her daughter Domenica, a local favourite: maccheroni a descita, or cavatelli. This is served on special occasions with stuffed cuttlefish or seppia in Italian.
The fried breadcrumbs served with the pasta are because traditionally people could not afford the cheese. Also it had a nice crunch!
Rachele's family uses 00 flour - while other people in the village use semola flour. 00 flour means the pasta has less bite to it.

    I wonder how on earth 17 people could dislike such a beautiful and interesting video. My grandma from Barletta used to make a very similar dish, she only added pecorino to the filling, but it is pretty the same for the rest of the recipe. Thank you Pasta Grannies for another amazing video!

    Alessia I want to like them but the repetitive loud background music gives me a headache and makes it impossible to watch for very long. No need for music, in my opinion. Let the people speak and leave it at that.

    Beautiful, strong and loving hands making pasta for 85 years. It's just amazing. You can see the pride and joy in both their faces as they pass on a beautiful tradition and how blessed we are to have the ability to witness such a thing in this day and age.

    I wish I had a nonna who taught me these skills.I did have a Sicilian gramma who was an amazing cook and my Dad taught me a lot,but I wish I had seen my nonna more than once a year when I was a child.These ladies are so special.That's why God has blessed them and this channel is the BEST on you tube!.No fancy machines or pasta from the store.I cherish these videos and wish at 70 that I could have had these ladies in my life.

    Hi they were a very superstitious lot, I hope it's fading. Don't they know salvation has nothing to do with their rituals but everything to do with Jesus. He said ' It is finished.' Come on you dear grannies, and thank Him. I once saw a line of older Italians file past the bones of some long dead 'saint', when one woman ran to the skeleton and broke a finger bone off near his giant ring. Not only touching something unclean but practicing witchcraft unknowingly .

    I had the opportunity to work in Italy for 3 months every year for 8 years and I can tell you these rural pasta dishes are absolutely to die for. They're a cheap and unbelievably delightful lunch with chilled white wine and fruit in summer or a full bodied red, more cheese and lots of nuts in autumn. Sadly I never dared to spend the winter in the mountain villages.

    I Love this channel.. I'm from Argentina and I always watch some of your videos before going to bed because I love cooking homemade pasta. My grandma used to do this pasta and it was my favorite one... She used to call it "cicatelli" (not sure if that's the spelling) and I helped her to do the shape with my hands (I was just a kid, now I'm almost 40). Thanks for making me travel to my childhood once again!

    @@pastagrannies Hi Vicky, I've made some research (via google), and indeed the Latin word for parsley is petroselinum (petros - a stone, and selinon - celery growing on stones), it spread from Greece to Poland in Central Europe and reached the Russian language as 'petrushka'. How close is the world!
