This is dish is called 'spaghetti alla chitarra con pallotine' in Italian. It's a speciality of Abruzzo and nonna Emilia shows us to make it with the help of her grandson Fabrizio and his wife Alessia. These people are why we have to cherish and take care of elderly people. They are so rich and beautiful from life. So amazing. I feel so sad for all these poor elderly people dying from covid 19
This has to be the best job in the world. Travel around Italy, meet these amazing grannies and their families and eat fabulous handmade pasta dishes. I couldn’t imagine anything better.

I live in Abruzzo and bought one of these chitarra devices last year. It’s the best pasta you can make, I think. Great texture and goes well with meat or fish sauces. I use it at least once a week, normally Sundays, and love it. I always make the pasta with semolina flour and eggs.

Makes my heart happy to see this family appreciating a lovely tradition together.
She has the same accent as my grandma, she reminds me of her so much. She used to prepare this dish at least once in a month and it was definitely my favorite one as a kid. This woman is so precious!

No, she was from the Chieti province. My mother has bought a "chitarra" and keeps the tradition alive :-)

hi Michael, great suggestion 😊 it's something I'm trying to think through the logistics of as it would mean spending longer with the Grannies - not a hardship of course, but up to now we try and film 3 Grannies a day when we are on location. This channel is great. I am of Italian descent and was always around my Grandmother. When I see them make and roll out the dough, it’s what my Grandma did, making pasta. Today I made mini meatballs to have with pasta. So cute Granddaughter hugging her at the end. I miss the old days like this. Not the same! Nothing like Italian Families!

Izzy Long I'd give it 100 ! :) This was my favorite dish as a kid (and even today). When, as a child, I went to my Nonna in Italy on Sundays, she knew it and she always made me Pasta with meatballs. :)

Love this video!! My grandparents came to America from San Pedro and Ateleta in Abruzzo. Have recently started making homemade pasta and want to make chitarra pasta since it is from this region.

4:04. Maybe an indication for Americans ....this is how “Spaghetti and meatballs" are made and not like they do them in America, with the big meatballs. PS: This was my favorite dish as a child. When I went to my Nonna on Sundays, she knew it and always made me Pasta with meatballs.

I'm hooked to these videos. One thing I noticed though is that hardly any of the Grannies use herbs. No basil, thyme or rosemary, which was surprising to me.

There's a couple of reasons for this: firstly, it's all about the 'cucina povera', or peasant's cooking, using only a few but very fresh ingredients that are immediately available at the time, and secondly, in a mostly mountainous region like Abruzzo, where it gets very cold for many months of the year, coming by fresh herbs are difficult, and are usually only used in the high summer season. My mother, who is from the high mountains of this region, cooks exactly along these lines.
