Hello .
I'm Boone Bake.
Today, I'm going to make a square version of the beautiful fruit jelly cheesecake I made a while ago.
In the process of making in the last video, I collected some common questions and made a square fruit cake hoping to answer those questions.
Because of the nature of baking...
There was a part that was very difficult to explain in words...
For example, some people were curious about removing vinyl from the floor.
It was very difficult to explain in writing.
I did not edit as much as possible.
In addition to the brown sheet (Teflon sheet) that I use, I also tested transparent vinyl..
I got a good result.
So, even if it's not a brown sheet, you can make enough with the vinyl used for wrapping cakes.
However, if you do not remove it carefully, the jelly may break, so you must remove it carefully.
I tested it even after applying vegetable oil to the plastic...
Not very recommended.
There was some oil on the jelly, and applying oil doesn't mean it's removed more clearly...
This time, I used the jam at home and put it inside as a filling.
I didn't write down the amount because the jam has a different sweetness.
I think you can use about 80g.
However, depending on the sweet taste, please adjust the amount.
And it's easy to squeeze the jam if you heat it in a microwave before use.
A combination of fluffy sponge cake and soft cheese cream~!
Energetic jelly and fresh fruit meet~!
It tastes as good as it is beautiful.
● If you want to use gelatin leaves, subtract the amount of water measured together.
You can use the same amount of gelatin after soaking it in cold water.
And this time, we also weighed the cup, so even those who don't have a scale can try it.

(237ml = 1 cup)
15ml=1Tbsp
5ml= 1tsp
♥ Cake finished size (19.5cm*19.5cm*10cm)
♥ Vanilla sponge cake
(Mold size: 15cm*15cm*7cm)
4 egg whites
110g sugar (1/2 cup + 1 Tbsp)
4 yolk
A pinch of salt
4ml vanilla extract
40g milk (2 Tbsp + 2 tsp)
120g Cake Flour (3/4 cup + 1 Tbsp)
40 g unsalted butter (2 Tbsp + 2 tsp)
♥ Soft and Rich Cheesecake
350g cream cheese (1 cup + 3/4 cup)
205g Unsweetened Yogurt (3/4 cup + 4 Tbsp)-drained
100 g sugar (1/2 cup)
10 g lemon juice (2 tsp)
8g powdered gelatin (1 Tbsp)
40g water (2 Tbsp + 2 tsp)
200g heavy cream (50% whipped) (3/4 cup + 2 Tbsp-before whipped)
♥ Transparent Lemon jelly

60g powdered gelatin (1/3 cup +1 Tbsp+ 1/2Tbsp)
300g water (1 cup + 1/4 cup)
600g hot water (2 cups + 1/2 cups)
200 g sugar (1 cup)
40g lemon juice (2 Tbsp + 2 tsp)
♥ Strawberry jam 80g, mango jam 80g, kiwi jam 80g
(Add or decrease the amount depending on the sweetness level.)
♥ Used fruits
Strawberry, kumquat (not orange), dragon fruit, mango, shine musket, red cherry, kiwi, yellow tomato,

♥ Brown Paper used: Teflon non-adhesive sheet AF008
● Thickness: 0.08mm / Width: 1M
● Characteristic
● PTFE Coated Glass Fabric
ㅡ Glass fiber coated with PTFE and has various thicknesses and widths.
● Non-stick Almost all materials do not stick, and materials with strong stickiness are easily separated.
Durable material has excellent long-lasting properties without deterioration or deformation in its original state.
● Abrasion resistance ㅡ It does not wear against friction and has excellent resistance to wear.
● Corrosion resistance ㅡ It does not corrode and has excellent resistance to corrosion.
● Chemical resistance ㅡ not affected by chemical environment.
● Chemical Resistance-Most all drugs are not invaded.
● Heat resistance: It can be used from -78℃ to +260℃.
It is easy to clean because it does not adhere well to non-oil or oil.
● Dimensional stability Excellent even at high temperatures and pressures.

Thanks Boone Bake. I tried your Dragon fruit jelly cake. Small tips & measure ments are nicely shown in video. My cake was appriciated by friends .But my jelly was not as transperant as yours. Yours is crystal clear. While mine is little milky. Can you suggest anything to make it like clear water?🙏

Best cake i've ever seen in my life so far.
instead of tomato, shine muscat and kumquat, I'd use starfruit, grapes and mandarin orange slices. other than those ingredient choices, this dessert looks incredibly gorgeous and refreshing. something I'd love to see at a tea party or a summer or spring party.

This creation is about 60 years too late, it's not the sixties. It looks delicious.

생과일이 잔뜩 들어간 과일 젤리 치즈 케이크라니 보기도 너무 예쁘고 맛있어보이네요. 속에는 케이크, 겉에는 과일 젤리라니 특이하고 신기해요. 아이디어가 정말 뛰어난 것 같아요.
