Today, I will make jelly cheesecake with dragon fruit (Pitaya) full of mystical feeling.
After all, a beautiful pink cake was completed with the color given by nature.
It's so beautiful.
The round cheese balls come in two colors, and the dragon fruit is sliced as it is, so the taste and texture are perfect.
The harmony of elastic jelly and fresh fruit~!
It tastes as good as it is beautiful.
(If you want to use gelatin leaves, subtract the amount of water measured together.
You can use the same amount of gelatin after soaking it in cold water )

♥ About Dragon Fruit (Pitaya)..
The Dragon Fruit belongs to the Cactaceae family.
The names vary depending on the region.
It is named because the appearance of the fruit open on the branch that looks like a cactus resembles a dragon biting Yeouiju.
In English, it's also called Pitaya.
The country of origin is Central America.
It is widely cultivated as an economic crop in warm regions of Asia such as Vietnam, Taiwan, China, Thailand, and Japan, and is also cultivated as a special product in Jeju Island, Korea.
There are baek's sarcoma, red's sarcoma, and yellow's sarcoma
Baek's sarcoma is a red breed with red skin, but white flesh, while red breed is a red breed with both skin and flesh.
Yellow sarcoma has yellow skin and white flesh.
The yellow dragon fruit is said to have the strongest sweetness.
Potassium content per 100 g of flesh is 272 mg, which is superior to apples and pears, including phosphorus, magnesium, calcium, iron, zinc, sodium, carotene, water-soluble dietary fiber, carbohydrates, protein, lipids, vitamin C, vitamin B1, vitamin B2・It is rich in minerals and antioxidants that are beneficial to the human body such as vitamin B3.
It is a low-calorie fruit and is rich in dietary fiber, so it is used in the diet of diabetic patients and is helpful when dieting.
It is also rich in various fatty acids.
In terms of composition, myristic acid 0.2~0.3%, palmitic acid 17.1~17.9%, stearic acid 4.37~5.49%, palmitoleic acid 0.61~0.91%, oleic acid (oleic acid) 21.6~23.8%, cis-vaccenic acid 2.81~3.14%, linoleic acid 49.6~50.1%, linolenic acid 0.98~1.21%, etc.
You can mix water, milk, yogurt, honey, etc. and grind it in a blender, and it is also used as a main ingredient for making flower or jelly.

80 g graham cookies (small pieces-20 pieces)
10 g sugar (1/2 Tbsp + 1 tsp)
40 g unsalted butter (2 Tbsp + 2 tsp)
250g Cream cheese (1 cup + 1/4 cup)
65 g unsweetened yogurt (5 Tbsp)
50 g sugar (4 Tbsp + 2 tsp)
10 g of lemon juice (2 tsp)
10 g powdered gelatin (1 Tbsp + 1 tsp)
50 g water (3 Tbsp + 1 tsp)
250 g heavy cream (60% whipped) (1/2 cup + 2 Tbsp-before whipped)
(milk fat 35%)
♥ Transparent jelly
32 g (1/4 cup) powdered gelatin
160 g water (1/2 cup + 3 Tbsp)
320 g hot water (1 cup + 1/3 cup)
105 g sugar (1/2 cup + 1 tsp)
20g Lemon juice (1 Tbsp + 1 tsp)

I love these videos, because there is no stupid loud background music, for one; also the baker doesn't feel compelled to talk non-stop from beginning to end. Just subtitles are enough. I find these videos very soothing and educational.

I like how you don’t just use the dragon fruit for the balls, you use the entire thing. Nothing goes to waste~ I think of you as a perfectionist, Boone Bake, because of how precise and perfect your cooking is. 😉 To be honest when I first saw this video on my recommended, I thought the pink cheese balls had food coloring when it’s really just pure nature juice. =)

I baked this cake for my Birthday 🎉just with a little bit change on the base. Instead of cookie and butter I put a thin layer of baked cake. My friends were amazed by its taste and decoration. Also it was so light and soft, we all enjoyed a lot. Thank you❤

There's a lot of sugar in it, in my opinion. 10g in the crust, 50g in the cheesecake, 105g in the gelatin, and an unknown amount in the dragonfruit. A can of coke is about 40g of sugar, so this whole cake would be at least 4 cans of coke. But many desserts have a lot of sugar like this, and I'm sure this cake tasted as good as it looked because of it :D

@@johnybalohny true, but nobody is gonna eat the whole cake at once. Also added sugar and sugar from a fresh fruit are not the same. And I think if we compare this cake to a frosted cake, this one definitely has much less sweetness

@@karinac4245 those are both good points. I was trying to judge the slice size by the size of her hand in the corner, and the bite size of the fork, and I think I could eat at least half of it :D
