I'm BooneBake.
Today I made a jelly cake with dragon fruit.
I used two types of dragon fruit: white dragon fruit and red dragon fruit.
The pretty pink color from the red dragon fruit made a very lovely cake.
I think the colors that come from nature are truly mysterious and beautiful.
I also made a dragon fruit cheesecake using the banana cheesecake as a base.
This banana cheesecake is so flavorful.
Even my friend who hates cheesecake enjoys this cake.
Also, banana and dragon fruit went really well together.
However, you have to be careful with bananas because they have severe browning.
Sprinkling lemon on it can prevent browning to some extent.
Lemon is a food that goes well with bananas.
If left together, the banana flavor will be preserved for a long time.
However, grind it right before use, and be sure to cover the cheesecake cream with kitchen wrap even when storing it for a while.

Heavy cream (38% milk fat)

370g cream cheese
65g unsweetened yogurt
100g sugar
145g banana
10g lemon juice
8g powdered gelatin
40g water
150g heavy cream (50% whipped)
23g mashed red dragonfruit (pink dragonfruit cheesecake)

● About dragon fruit..
Dragon fruit belongs to the Cactaceae family.
Depending on the region...
In the UK it is called red pitaya and dragon fruit, in Spain it is called pitaya roha, in China it is called Huo Long Ge, in Vietnam it is Thanh Long and in Thailand it is called Keo Man Khon.
The name was given because the fruit on the cactus-like branch resembles a dragon holding a fruit in its mouth.
It is also called Pitaya in English.
The country of origin is Central America.
It is widely cultivated as an economic crop in warm regions of Asia, such as Vietnam, Taiwan, China, Thailand, and Japan, and is also cultivated as a specialty product on Jeju Island in Korea.
Varieties include white dragon fruit, red dragon fruit, and yellow dragon fruit.
The white variety (white dragon fruit) has red skin but white flesh, and the red variety (red dragon fruit) has both red skin and flesh.
Xanthoma (yellow dragon fruit) has yellow skin and white flesh.
It is said that yellow dragon fruit is the sweetest.
The potassium content per 100g of flesh is 272mg, which is far superior to that of apples or pears, as well as phosphorus, magnesium, calcium, iron, zinc, sodium, carotene, soluble dietary fiber, carbohydrates, proteins, lipids, vitamin C, vitamin B1, and vitamin B2. ·It is rich in minerals and antioxidants that are beneficial to the human body, such as vitamin B3.
It is a low-calorie fruit and rich in dietary fiber, so it is used in the diet of diabetic patients and is helpful when dieting.
It is also rich in various fatty acids.
You can mix it with water, milk, yogurt, honey water, etc. and grind it in a blender, and it is also used as a main ingredient in making flower salad or jelly.

My fridge does not run out of delicious cakes and pastries because it's what my clients always give me.
