I have been cooking for well over sixty years, I love learning and looking at different recipes, from complicated to easy. My dear lady, if I may address you as such, it is a delight to hear your lovely English accent, down to earth instructions, a great video, much appreciated. Yes, I remember spam fritters, a staple meal in the past when there was so little choice to buy. Brilliant video, you could cook with me anytime, much respect!

We call this corn beef casserole in America but we quickly fry the corned beef and mix it well into the mashed potato. We also add French fried crispy onions ..... so good! Love seeing how everyone else prepares what we do. English cheddar is the best!!

When I do corned beef hash, it has fried onions, peppers, garlic, dijon mustard and boiled potatoes, all fried up with the corned beef added last with plenty of salt & black pepper.

That's is such a good tip about putting the tins in the refrigerator and then cutting the fat off. I never thought about that. My dad always makes corn beef and hash in the stove top. He cubes his potatoes and cooks them with onions and corn beef. I haven't had it in a long time.

  • @pencils1951

I do it the same way my mother did, I slice the corned beef and layer it on the bottom of the dish filling in any gaps, mash the potatoes and layer that, and cover with sliced cheese again filling in any gaps and then into the oven. A little variation, but you have three distinct layers, and it's great with brown sauce.

What I tend to do is have a layer of corned beef on the bottom covered in a layer of baked beans. Then I have a layer of mashed potato and fried onions mixed up together. Then I add the grated cheese to the top and as an extra little touch I put 4 raw eggs on the top of it and bake them with the corned beef hash so they blend nicely into it. Looks and tastes amazing when it comes out 😍

@@deebest4202 go for it! 😁 only little tip I would give you is to bake it without the eggs for about 15 minutes so the cheese melts into it and then pop the eggs on top of it and put it back in the oven for about 10-15 minutes. Otherwise the eggs will be overcooked.

Excellent. This is proper home-cooking, an art that seems to be disappearing too fast (sadly). Your children are going to have fond memories of mum's cooking and hopefully, they will adopt it and continue with your recipes for their own children. Some people like to layer baked beans with hash, but like you, I'm not a fan of this method. But I do like lots of fried onions. And cheese. 😁 I like your trick with putting the tins in the fridge. I've never thought of this. Personally I wouldn't bother cutting the fat off as it will have a similar profile to olive oil, but again, that is just personal preference. Well done!

Now thats made me bloomin hungry. ^ eyes looking at tins of corned beef and left over tin of beans in fridge! My mother always used to put some fried onions and the beans in the dish as well. That looks good, when I've had corned beef hash it's been more like a stew and I haven't really liked it. You do it like cottage pie though and I'd never thought of that. I'll definitely have onions in mine, going to give that a try very soon. I love corned beef. By the way when I use it I always trim the fat off the outside too.

First time viewer. This came up in my feed because I watched a different corned beef hash vid. This is different from any I've had in the states. Interesting. I've made beef brisket as corned beef. Using leftover meat and small cubed potatoes like potatoes O'Brien fry the mixture in a skillet and lastly add an egg to fry to preference for a terrific breakfast. The potatoes look nicely yellow. I love Yukon golds.

Onions are a must - adding milk to mash potatoes only serves to make the potatoes wetter not creamier - either use cream or alternatively use an egg. This along with butter is more than adequate for perfect mash spuds. I never use white potatoes for mash as they have to much water content. Use red potatoes - if in doubt ask your greengrocer.
