    I would recommend adding the spice pack AFTER you skim the scum off the surface. If you don't, the floating spices get trapped in the scum and you will also remove the spices and lose a lot of flavor.

    Blessings celebrating St Patrick's Day here in Spring Valley NY. I'm 62 African American female-(lol). My mom cooked corn beef but like basic pot roast)brown gravy)- as young adult surrounded by many cultures and being nurse at traditional Catholic Hospital I was introduced to the dish- also as a little girl I marched wth my Girl Scout troop in the annual parades. Church Pastor cooked this dish every year for the parishioners and community; that's St Charles AME Zion in Sparkill NY.-( it was apart of the underground railroad.- anyway, for Several years I picked up the tradition and would cook this meal for my neighbors. During my lengthy adventure with covid, I thank God for full recovery. I have picked up the mantle once again. Be Blessed, spread love and joy wherever you can. God is still watching over us❤🔥

    I have had the most terrible day! Looked up a corned beef and cabbage recipe from chef John and BOOM! My day instantly transformed! When you said “if you’re drunk, that’s quarters cut in half”. I laughed out loud and my day was made! Thanks Chef John!

    OMG! Fantastic! Have NEVER made this in my life, but followed your recipe to the T. My husband even liked it. I have always eaten out on St. Patrick's, but have NOT been happy.     I made this last night for St. Patrick's day and I can honestly say this is the best corned beef and cabbage I have ever had. I completely gorged myself on it last night and now I'm having it for breakfast. I had to slightly modify the recipe because I used a LARGE cabbage and a smaller Brisket, so naturally I needed more salt and seasonings, I added 2 cloves of garlic, a dash of accent(msg), loads more salt and lots of fresh ground black pepper. I served it with a dab of butter on top and more salt. Delicious!

    It's fun to find Chef John videos less cadence but same format and humor, easy on expectations and love them all. As with recipe videos from those like him producing steadily over a long time -- and me lucky to survive at my job to sustain what I've loved doing so far for 25yrs -- start off straightforward and develop that cadence, that swagger, proliferating joy from successive accomplishment built from unique bricks of experience. Then you find out you've had followers, fans and competition -- and somehow evolve even further. As far as instructional videos go I'm glad Chef John's Foodwishes format has been consistent. And thank you to remind me of myself.

    Made this yesterday, and it was great. Only change, I omitted the extra added salt to the water. Didn't miss it at all. Tks Chef John! I forgot to add the seasoning packet after skimming the scum off (which wasn't in the video but do it normally) So I put a small sieve over a measuring cup and put the skimmed liquid in that, then rinsed the spices off to add back into the pot. Worked like a charm.

    One of my favorite meals at anytime. You cook your corned beef the same way my mom cooked it. She always added an additional 30-45 minutes on the beef. Yummy yummy!!

    Thank you, I got your recipe and pointers before having my Mom over for dinner today. Mom usually does it, but being 90 years of age she handed the job over to me.     this dish always warms my heart, growing up i felt it connected me to my homeland, and while it wasnt made in ireland, it was made by irish immigrants in america and canada inspired by their traditional cooking. its like comparing american pasta and pizza dishes to italian ones, theyre both unique but both equally authentic in my personal opinion!

    I make this every year! I buy a couple more corn beef and freeze them because sometimes I craving it. Someone gave a great tip about adding season packet AFTER you skim off the scum. I add a little butter when I add cabbage. We eat ours with prepared horseradish and put extra pepper when serving.

    Just made this yesterday - 2 issues... We put the onions, carrots and celery in at the start like was shown in the video. By the time this was done there were no carrots or celery left. They had cooked to mush and just disappeared. They should be put in at the same time as the potatoes. Next - make sure to read the package that your Corned Beef comes in. We drained and rinsed the beef as recommended in the video, but it was recommended that it be used with all the juices as it comes out of the package without rinsing. We ended up washing off a lot of seasoning and flavor. Chef John used a flat cut in the video. We used a point cut (it was all I could find) and it was thinner and cooked faster. It also had a lot of fat. It cooked down to about 1/2 the size we started with and the liquid was very greasy. I recommend using the flat cut. YMMV! Enjoy.

    I cook it for the first time last night using this receipt. Man was it good turn out prefect , The only thing I can add is he said let the meat rest for 15 min. Be careful, When I set my cook corn beef on cutting board to let it rest after cooking, after 10 mins it look like it was trying to dry out real fast. So I went ahead and cut off a few slices and put the corn beef back into the pot with the stock liquid with the cabbage to keep it from drying out..... Thank you for a great receipt really is a great one and I will cook it again using this receipt.

    Made this on Sunday with a loaf of soda bread (I had a 3 pound roast). The beef was like buttah and everything was so tender and tasty! This is one dish where leftovers are the best - lunch for a couple of days.
