    For many reasons, Koreans are known as the Irish of Asia. This sounds like a great mashup that I can't believe I'd not thought of before. Going to try this next time. But I'll use Kass/OB or another Korean beer instead of water for the liquid.

    Pretty much this is what Koreans call "Kimchi Jjim", which translates to steamed kimchi. Usually, pork belly is used instead of corned beef, but what Chef John did is pretty much the same thing!

    Chef this recipe is perfect for what I have going on right now. I am in culinary school and came up with a Ruben sandwich topped with kimchi in place of the kraut. I also added sriracha to the normal Russian dressing and call it a kicked up Ruben sandwich.

    A tip from myself as a Korean: It’s probably the best to get kimchi that is quite fermented since it would have more strong of a flavour. Koreans always use very fermented kimchi for any sort of soup that has kimchi in it. But usually the store bought ones are not too fermented and made more recently so they don’t have a pickle like taste. So if you do make it with store bought kimchi just let it sit for a few months so it’s fermented properly :)

    Yes. First, buy a big Jar of kimchi, for the first 1-2 months, enjoy it as fresh unfermented Kimchi. Once the smell and tastes gets too strong and sour, leave the big jar in the fridge. It will be perfect for soups for the next 1 year. Some Koreans will even use 2-3 years old kimchi for soups.

    Nice variation. I cooked this only last week but with carrot, celery, whole black pepper, cinnamon stick, few cloves, an onion quartered, a few whole garlic cloves, 4 whole dried red chillies and bunch of thyme for 2 hours. Nice!

    Excited to try this. We always have fresh home-made kimchi as my sister in law is korean. I think what I'll do is dilute some of the kimchi liquid with water and then pressure cook the corned beef with it, then cook the veges, then add the actual kimchi cabbage in so that it doesn't lose it's texture in all of the cooking.

    Please try braising pork baby back ribs with kimchi and a little bit of onion. With very minimal seasoning/ all of the seasoning coming from the kimchi. It’s truly the best! It would be awesome if you could get your hands on some whole “pogi” kimchi, the ones that haven’t been chopped up. This dish tastes amazing with just a bowl of hot rice!

    A possible variation on this could be to substitute daikon radish for the celery. Personally, I would like celery better, but it is not available at some smaller grocery stores here in Korea. The daikon would push the flavor profile a little towards the Korean side.

    Nice simple fusion! I hate when Asian fusion gets so complicated and weird. Love the home feel of the meal which is traditional of both kimchi and corned beef.

    I’ve been thinking about cooking corned beef and kimchi together but every st. Patrick’s Day I ended up cooking the traditional way because I didn’t want to ruin my once a year boiled dinner by experimenting. But now with your recipe and tips, I can try. Thank you. Btw, we Koreans usually cook pork belly with very aged kimchi.

    I made this tonight with the Corned Round of Beef - SO AMAZING - and definitely better than the corned brisket if you can get it. I found my Corned Round of Beef at BJ's. I added new potatoes, real baby carrots and some VERY fermented kimchi I had in the fridge. I did it in my Instant Pot so it was ready in 50 minutes - so very, very delicious! Tomorrow Corned Beef Kimchi Fried Rice with the poached egg!!! Thanks Chef John!!!!
