☀Cooking With Mom: Vietnamese Egg Rolls {Cha Gio}

My mom never fails to provide us with her crispy egg rolls during any event, party or gatherings. I grew up with this stuff, and the junk you get from your local Chinese take out will no longer come near your dinner plate after trying this out! Over the years mom has changed her recipes a few times by adding or removing shrimp and taro. This recipe is the simplified but still very delicious version of her egg rolls. I personally prefer this since I am not a fan of shrimp, plus taro is a bit tricky to cook and prepare.
Note:
Recipe for 50 rolls:
½ cup sugar (or truvia)
2 tsp. Salt (to taste)
2 tsp. Pepper (to taste)
1 Package of Cello phane Noodles- amzn.to/13Bq1Zp
1 egg
2 lbs ground lean pork (turkey meat if you don't eat pork, soy ground meat, or shrimp)
2-3 Large Carrots
½ Cabbage
½ Large Onion

    I started to noticed how much my mom loves it when people compliment her cooking. This is the best compliment and she watches her cooking videos about 20 times. It's work, but it's my way to show my mom how much I appreciate her...and she loves LOVES the attention ^_~

    I just want you to know I made you moms egg rolls with my family the other night and they were a smash hit with my family and our guest. Btw, my daughter followed your mothers fish sauce recipe to the letter for the egg rolls and our neighbor, who is from Vietnam said it's the best fish sauce she's had here in the States!     "If you don't like onions, you can surely leave it out." I use shallots instead - the ones that still look like small brown or regular onions. A much more subtle, mellow/mild onion flavour. They are also easier on tummies that are sensitive to strong foods. Glad I found this channel... 7 years late.

    I have failed at making egg rolls for 18 years. With this recipe, I finally arrived. The egg rolls were fantastic, flaky, crispy and freeze well. I am so excited. I don't have to buy restaurant egg rolls anymore. I can now make my own... and this recipe is so EASSSSSSSSY!!!!

    It's so sweet how your mom makes sure you tell us every little detail that it's important for the recipe! Makes me feel like she really cares about us having the full knowledge to make it yummy and tasty /o/ I'm loving this series!     I made this, best thing I've eaten in a long time! Obsessed and I had to freeze half because there was so many but then I thawed them during a party and they were a huge hit! I miss this cooking series!

    My mom adds wood ear fungus and tons of garlic she also don't precook the pork because it will get dry and tough. I really like the way your mom wraps the egg rolls with the corner folded up.

    No no no Hell no what come on Oh no that’s the way I know it is made at least in souther California. They all have that ear fungus in it and that’s what makes it good

    I think your mom did a great job. I'm Cambodian and my mom makes her similar to yours except my mom does not like to precook her pork. She did tell us if we want to make sure that the meat was cooked thoroughly during the eggroll frying period, we can precook it. Some people are very ignorant to personal preferences. Your mom can cook it however which way she wants to and she will STILL make it her own VIETNAMESE STYLE. I watched plenty of khmer cooking channels that have their own style and is VERY different then my mom's. To each is own. Great video. One of the only video that is most likely my mom's style :)

    Love these videos hahahhaah I know everyone cooks things differently but I kinda like watching the different ways your mom cooks compared to mine since my mom just mixes everything raw and we use fish sauce and black fungus etc

    Thank you for doing this video! For over a year I've been looking for an egg roll recipe that wasn't too intimidating to attempt. Most recipes I've found have like over 10 ingredients and involve so much prep and it's just too scary for me to even try! Lol. This one seems so simple and looks delicious!     thanks for the wonderful cooking video! your mom really reminds me of my mom: she's very practical and good with cooking and truley believes in the simplicity of recipes! The eggrolls use ingredients most of us probably have at home or that we can get from a local market :) I love eggrolls and will probably make these in the future!

    These came out so, so amazing for me on the second try. (I only made about 8 with the mixture first try so I had plenty mixture left to try again the next day. I used ground chicken for the meat 😉 .) Had to learn how to turn the rolls without breaking them. I used chopsticks and a small cookie spatula to help me turn. Also, pieces of cabbage I had in the mixture 1st time were too sharp and pierced through the wrap while wrapping and cooking them. 2nd time I made sure cabbage pieces I put in the rolls we're softer. It was great that you demonstrated the rolling twice in a row to reinforce learning. Such a great, easy to follow video that I was able to refer to several times. Well done and thank you!!!!!

    Great question, mom lived on a farm in the U.S for awhile where she worked with mostly hispanics/mexicans who did not speak english. When we moved to NE she worked a company with mostly vietnamese people. Any english that she needed...I was always there to interpret.

    Tip for testing the oil is by sticking the end of a wooden spoon into the oil, and when bubbles form around it, that means it's ready for frying. :)
