I am 88 and taught cooking for 8 years. My grandson, a chef, taught me a neat trick for making cabbage rolls. Freeze the cabbage first. Thaw, take out the core. Leaves fall off the head and are already wilted.

I used to have a neighbor like her when I was in my 20s. She was in her 60s. I’d drop by after lunch and we’d cook all afternoon. She was an excellent cook and taught me a lot. She was a lot of fun to spend time with. When I watch Rachel, it reminds me of those afternoons cooking, though Rachel is much younger than my neighbor was.

Rachel love your channel. My mom is slovak and she makes really good halupki. A little tip for you to make them xtra special is- at the very end of your dish after the final saucing you thinly slice a little extra onion and spread it over the top then you put a few strips of raw bacon on top of the onion slices then cover and bake as usual. That extra bit of onion and bacon adds such I nice flavor to the tomato sauce. Try it you’ll love the result, I promise.

Your 3/4 cooked rice comment reminded me of a childhood memory. My mother's cousin was a newcomer to this country. Born and raised in Belgium, she escaped the Nazi deathcamps to settle in the U.S. after living in Israel for a number of years. Well, her first year living here in the United States, she told my mother and my mother's sister that she would make Thanksgiving dinner for our families. However, not knowing the American traditional custom of serving turkey, dressing, pumpkin pie, etc., she decided to serve cabbage rolls. Only, they were not like your cabbage rolls... not by a long shot. For one thing, she threw the rice into her meat without cooking it first. The rice was so hard, it tasted like pellets and crunched with every bite! So, as little kids often do... I was brutally honest about my disappointment. I whispered to my mother, who was sitting across the table from me, "This is the WORST Thanksgiving I ever had!" Of course, my mother didn't wish to hurt her cousin's feelings, so she gave me a swift kick from underneath the table! Funny that I look back at this one Thanksgiving today as perhaps the one I remember most... not for the horrible cabbage rolls, but out of fondness for the woman making them. Making these cabbage rolls was, in fact, a testament to this woman's strength and will to survive the unimaginable horrors of the death camps, to journey halfway around the world, and cook a meal for her remaining relatives in a new land.

This video brought back so many memories of my childhood. My grandmother made cabbage rolls every holiday. We called them hulupche, she didn’t use meat for her filling. She sautéed onions to a nice golden sweet taste, then added partially cooked rice. She’d fill the bottom of the roasting pan with boiled cabbage leaves, fill up the pan with the cabbage rolls, add 2 Tbs of vinegar, dot the top with lots of butter. She’d cover the top of the rolls with more cabbage leaves. They’d cook in her roaster for 90 minutes or more. There would be 50 + for Thanksgiving or Christmas at Grandmas, she never ran out of her delicious Polish food. My daughter makes them, as well do lots of cousins, 4 generations cooking Grandma’s food. You are a fantastic teacher! Thank you.

My mother was a banquet cook for over 20 years. Cabbage rolls were made for nearly every meal in an ethnic hall. She made the rolls with a little ground beef, ground pork or sometimes veal., with lots of rice in a big roast pan over 200-300 at a time. Covered with a mixture of tomato soup and tomato juice. Cooked for many hours ... delicious.

Rachel - I cannot tell you how much I appreciate you, your style, and loving heart. We grew up on cabbage rolls. My beautiful late Mother came from a Polish family (her maiden name ended in 'ski') and they KNEW how to make their cabbage rolls. My Dad's family came from old school Russia - they were also Extremely PROUD of their cabbage rolls. My husband, however, is from a Hungarian heritage on his father's side. ALL of these family heritages were absolutely PROUD of their cabbage rolls. For me, I lost my beautiful mother when I was just 17 years old. She LOVED to cook and loved us so so much. I cannot tell you how much she would have enjoyed you and your easy-going style of cooking. I feel like she is reaching out to me through you and teaching me what I didn't have the chance to learn from her. I know that sounds cheezy and hopeful; but, I'm convinced she is reaching out to me through YOU. May God Bless you and your family. Thank you for helping me through the loss of my beautiful loving mother. I'm 54 and, to this day, I miss her SO much. Thank you, Rachel.

Great recipe. Just like my mom's. What she used to do with that extra part of the cabbage is chop it up very fine add some chopped carrots and put it in the bottom of the casserole just like you did with the extra leaves. That way we had extra cabbage with are cabbage rolls and sauce. And we always had mashed. The sauce Is good on top of them too.

I've been making these for 30+ years and I use same ingredients for my sauce as you except I use red wine vinegar because it's what I always seem to have handy! I love the sweet & slightly sour taste of these. I also have learned over the years when I'm in the mood for cabbage rolls hut only have a partial head of cabbage or I want something quicker, I make the sauce, cook my meat and add to the sauce add my chopped cabbage and 3-4 cups beef broth and let simmer about a half hour or until the cabbage is soft. I then add my rice (completely cooked) and just simmer to meld the flavors and we have a wonderful cabbage soup with fresh bread and butter.

I make my cabbage rolls exactly like this. My ex mother in law gave me this eastern european recipe 50+ years ago. The only thing different is that I use lemon juice instead of vinegar and i add grated onion to the meat mixture. Sometimes I add a bed of sauerkraut to the bottom of the pan. I also cut out the core and chop up any remaining cabbage and add to the bottom of the baking dish. We eat it with mashed potatoes or mashed turnips. Yum!!

From one Rachel to another, thank you for this recipe! You explain things exactly the same way my Mom did when she was teaching me this recipe and many other ones, right down to your accent. "Just like that!". She said it and so do I whenever I explain anything. Sometimes she taught me the recipes in Spanish. It made studying the language in school so easy. Poor Dad didn't understand but he certainly enjoyed the results. Mashed potatoes in our house,, too. These cabbage rolls are delicious! Since I like them a little spicy, I add a small amount of red pepper flakes in with the garlic and onion. I can't say Worcestershire either. It's thst "brown stuff" or the "L & P sauce" from Mom's favorite brand. Keep the recipes coming!!

My absolute very favorite food!!! My Mom taught me how to make them. She learned from an old German woman when she lived in NY. We do ours on the stovetop in a large pot or dutch oven. We make our tomato sauce and stack the rolls in the sauce. Then we usually cover them in sauerkraut and let them slow cook for a couple hours. Oh my they are so good!!! This dish has always been my favorite food. Mom would make it for mu birthday dinner!!! At 75 I am the one in my family who makes them now and shares with all family who lives close by. Always have them for New Years Eve and New Years day!!

Now I’m in the mood for stuffed cabbage…I’ll make some this week. That’s how I like my tomato sauce in my cabbage rolls too…some use a can of tomato soup and I don’t like them that way.

This was very thorough and comfortable to watch. This sounds like a good recipe. My aunt never used a recipe and every time I made it tasted different. We'll be having it in a week. Thank you.

OMG Rachel, I could watch you cook all day. My husband loves cabbage rolls, but I have never made them bc I thought the recipe that his Mother gave me was a little complicated. Yours seems so much more achievable without fretting too much about it. Looks delicious!

I like to use chicken flavor Rice a Roni instead of plain rice . Like you I do exactly as your recipe other than that. A bottled sauce can be used if you want to speed up the process. So good .

I am from Bosnia and Herzegovina and my family made cabbage rolls my whole life and now I am 35 and I also make it for my family. It’s slightly different than your recipe. We do not boil cabbage we actually ferment it first and then we fill and boil and once done it has this thick sauce in between each roll. We typically eat it with mash potatoes so we add the rolls and the sauce on top of the mash potatoes. It’s very delicious. The way you boil fresh cabbage we do the same with young grape leaves and fill similar way you did it with cabbage.
