Sharing a family secret here: 1 tablespoon of *finely* minced onion in the gravy. Add it when the sausage is almost done so there's time to cook the raw onion flavor out.

He said it was pretty good, but he likes his with a bit more “kick” to it!! LOL This is a kid who is probably more Irish than anything & LOVES Tapatio hot sauce!!

I bet there are a zillion ways people make sausage gravy :-) I like to add a lot of black pepper to mine, and use sage sausage if I have it, or add a little dried sage if I don't. BTW, if your roux is fully cooked, and all of the flour particles are coated with fat, you can add all of your milk at once without risk of lumps.

Brittny, here's my take on gravy. Fry bacon, sausage, or even hamburger to get grease in your pan for the gravy. (Don't use extra lean sausage or hamburger or you won't get enough grease.) Remove the bacon or sausage/hamburger patties. With the pan over medium-low heat, add flour (plain or SR) one tablespoon at a time and stir into the grease. Keep doing this until the mixture begins to look like an edible sauce instead of a greasy, runny mess. Count the spoons full of flour. After letting the mixture brown for at least two minutes (to cook the flour), add one-half cup of milk for each tablespoon of flour you added earlier. For example, four spoons of flour requires two cups of milk. Stir the mixture with a small spatula or wooden spoon that has a square end so you can easily cover the entire bottom of the pan. Let the mixture come to a boil. Once the first sign of a boil is observed, reduce the heat, or maybe even turn the heat off entirely. Continue stirring. If the gravy begins to get too thick, add a small amount of water and stir in. Salt and pepper to taste. Half the battle is controlling the heat. Too hot and you risk scorching, which is a disaster. Too cool and you may not cook the flour enough, or it will take all day to make the gravy. Give this a couple of tries and you will learn what works for you.
