Best Vietnamese Chicken Feet with Lemon Grass and Kumquats Recipe

This chicken feet dish recipe is a star to most Vietnamese get together. I have been making this dish over the years, and now I’m sharing this video to share with everyone. Hope you will make it and like it too.
You can cut down the recipe in half for a four portions. I keep it refrigerated.
Ingredients:
Sauce:
1-2 lemon
3/4 cup kumpquat (if you don’t have the fruits in your area, you can skip it)
4-5 clove garlic (sliced)
1-2 shallots (sliced)
2-4 red chilies
2-3 lemon grass (sliced)
1 & 3/4 cup fish sauce (don’t use the fish boat fish sauce brand. It will be too salty)
Adjust the sauce with more sugar or lemon if it’s too salty for you
Sugar water base:
3 cups hot water
1 & 1/2 cup granulated sugar
(Mixed and let it cool down in the refrigerator)
4lbs chicken feet
1 ginger
2 lemon grass
1/2 cup cooking wine
1/2 white vinegar
1/2 tbsp salt
