Today I'd like to share with you this super delicious chicken feet recipe! When you go to Dim Sum, chicken feet are something you must try. Some people love them, and some people just don’t get them. Serve 4 to 6
Prep time: 10 minutes
Rest time: 3 hours
Cook time: 1 hour and 20 minutes
2 pounds chicken feet, rinsed, nails off
2 tablespoons maltose
2 tablespoons white rice vinegar
8 cups canola oil, for frying
1 tablespoon extra light olive oil
3 slices ginger
2 stalk scallions, white part, cut into 1/2-inch pieces
3 cloves garlic, smashed
2 tablespoons sugar
1 tablespoon fermented black soybean (douchi)
1 tablespoon Pixian doubanjiang
4 cups water
2 tablespoons soy sauce
1 tablespoon dark soy sauce
2 tablespoons oyster sauce
2 tablespoons Shaoxing wine
2 bay leaves

Wow, I had no idea the steps it takes. I love chicken feet and I'll have a huge appreciation for them when we get Christmas Dim Sum. Thank you for showing how to make them. I always wondered where the color came from! May have to get Dim Sum before Christmas....LOL

Gorgeous! I love chicken feet with black beans but I admit I’d only buy in restaurants or from Chinese supermarkets ;)
It's crazy how much effort and time goes into this dish, especially when you consider that the chicken feet are one of the cheapest part of the chicken. But the result certainly is worth it, as long as it's someone else who put in the time and effort 😝

This recipe sounds delicious. My son and husband love chicken feet. Can this be made ahead of time? I'm thinking instead of soaking the chicken feet in the sauce for 2 hours (in step 5), I can let them cool in the sauce and then put them in the refrigerator overnight. When I am ready to serve them the next day or 2, I can steam them for maybe 15 minutes.

I'm making this, or a slightly changed version of it, tonight. I messed up and forgot to put feet in ice water after frying last night. I put them in now but expect that the point was to shock the skin a bit. nonetheless, after they soak for an hour I'm going to finish them up. I don't have the wine or pixian but am hopeful some sushi wine vinegar or mirin will improvise? I do have some other chili paste I'll use for the pixian. I'm hopeful it will still turn out great. I'll let you know. I can hardly wait to dive into them tonight! Thanks for this recipe.

Thank you for the easy to follow video! I been wanting to make this but most videos are way too long and too much non-sense talks where I lose attention quickly. You made it short and simple. Thank you! For this recipe, you use two different bean paste? I’m not sure what Pixian sauce is or what can I use as a substitute?

Actually, I love chicken foot. Learned how to cook them when I lived in Florida from some Jamaican friends I worked with at the Riverside Restaurant in Naples. Now I put them in my chicken Noodle Soup and call it Dinosaur Noodle soup lol!

My wok did not come with a bamboo lid because it was a cheap purchase, but a pot lid from another pan fits snug on top so now I can safely fry the chicken feet without frying my forearms in the process! Let's try this out and see if the wife likes it tonight!

CiCi After doing all those steps cooking chicken feet, is it really necessary to steam it? Would it taste the same if I started to eat after 45mins of low shimmer and skip steaming?

Hi Diana, thanks for the question! You can eat them directly after simmering for 45 minutes. They are completely cooked at that point. But if you were looking for puffier chicken feet with deep flavors. You could follow the recipe by soaking them in the sauce for 2 hours. Then steam them so the skin will puff up even further.😀👍

How close is the taste of this chicken feet recipe to an actual most dim sum restaurants taste? I see u got the colouring, the saucy texture on it, the afterlook of it right. Now all Im just curious is just how the taste is compared to restaurants.

@@aud548 Reminds me of my childhood. My dad moved to zambia for work, and we lived there until I was 8 before moving to the US. I remember always running to go eat lunch with our zambian groundskeeper, because I found the food way more interesting than my mom's. He used to cook up chicken foot stew, and it was magnificent
