    Step by Step Guide: 1. Preparing the Pork Belly: Using a sharp knife, score the skin side of the pork belly. Pat the pork belly dry with paper towels to ensure it’s moisture-free. 2. Seasoning: Generously season both sides of the pork belly with table salt. Ensure an even coating. Sprinkle 3 tsp of Chinese Five Spice Powder evenly over the pork belly for an aromatic blend of flavours. Drizzle 3 tsp of Chinese Shaoxing Wine over the pork belly to add depth of flavour. Massage the ingredients into the meat for an even distribution. 3. Flip the pork over and transfer to a large plate. Refrigerate with cling film (or uncovered) overnight to allow the salt to draw out moisture from the skin. 4. The next day, take the pork belly out and grab a sheet of foil and place it under the pork belly. Fold the foil up around the pork belly so that it covers all sides of the meat (leaving the top skin exposed). Pat the skin dry with paper towel. 5. Air Frying Process: Place pork into air fryer basket, skin side up. Air fry the pork belly at 120°C for approximately 30 minutes. 6. Take the pork belly out of the air fryer and remove the foil. Given that air fryer temperatures can indeed vary for different brand and model, and considering the pork was defrosted beforehand, it's possible that a couple of factors may have influenced the outcome. Here are a few suggestions: Check Air Fryer Temperature: Air fryers can differ in their temperature accuracy. To ensure even cooking, consider preheating your air fryer for a few minutes before placing the pork inside can contribute to a more consistent cooking experience. Thickness of Meat: The thickness of the pork cuts can also impact cooking time. If the pieces were thicker, they might require a bit more time. Alternatively, if they were thin, reducing the cooking time could prevent overcooking. 1st cooking through the pork the first 30 min before removing the aluminium foil, you should observe the pork should be 80% cook through at that stage, if nope, adjust 5-10 more minutes before removing the aluminium foil for 200C 2nd time cooking. Swap the pork position: considering swap the pork position during the 2nd time cooking for evenly cooking. It's always important to make sure your meat is cooked properly to avoid any health risks especially cooking pork. Hope these tips help.
