Apple & Tofu Puff Pastry Tarts 🍎 Vegan

Very simple recipe for delicious crunchy puffs with juicy tofu & apple filling!

Ingredients (for 8-10 tartlets)
☆ 200 g firm tofu
☆ 50 g soy milk
☆ 2 tbsp sugar
☆ 1 tbsp lemon juice
☆ ¼ tsp cinnamon
☆ ½ tsp vanilla extract
☆ 1 apple
★ 500 g puff pastry
✧ 1 tbsp liquid sweetener
✧ ½ tsp soy milk
🍎🍎🍎
① Mash tofu with a fork, cut the apple into small pieces and mix all ☆ ingredients.
② Cut your puff pastry into 8-10 squares and form the tarts according to the video.
③ For the 'egg wash' mix ✧ ingredients. Brush the corners of the pastry with it.
④ Place the tofu & apple filling in the center of the tarts.
⑤ Bake at 180°С for about 20 minutes until golden brown.

I love sweet recipes with legumes! Easier to fit them in every day when you have extra options outside of main meals :) Would this work if I used a banana instead of sugar?

Sure, you can use banana. It might make the filling moister but should be fine anyway :)
