Kisan Seisakusho
Bakery specializing in home-cultivated leaven (sourdough) opened in 2021 in a 140-year-old renovated private house.Azusa Omori starts by kneading the dough for all bread by hand.
She also does not use a fermentation machine, but instead controls the temperature in the room and the placement of the dough to achieve the best fermentation conditions for the bread dough.She then bakes the bread and cookies in her own wood-fired oven. On weekends, Omori's mother helps out at the store as sales staff.
Omori trained at the famous Okinawan bakery Munakata-do, and then at the farm bakery "Chantou La Vie" in Normandy, France.
She says her first encounter with "Country bread" was when he was a kindergarten student at a school where "Nova" was selling "Country bread"

bakerman here from germany. i am used to have 20 different machines around me . and 3 types of ofens. i processed 500 kg flour a day. but she is a superhero bakerwoman for me. ;))) greetings

It was a joy to watch the lady making authentic bread and running a charming bakery from home. A very natural way of life that involves hard work but lots of joy and satisfaction, unlike the corporate rat race. Wish her good health and good luck! I watched two videos of Japanese bakers and both were trained in France, just curious if Japanese bakers try to get trained in France as the country is known for their bread and pastries.

These master Japanese bread makers that do everything by hand is truly lovely. What does astonish me a little bit though is how dominant French breadmaking is in Japan. Whereas it is commonly known in Europe itself that Germany is the premiere breadmaking nation. There is no other place with as much variety in its bread. Super interesting how France still has the better reputation in Japan. Maybe it is because Japanese tastes prefer white bread....?

Thanks for giving me some insight. It's well known that there are many types of bread in Germany. But my understanding is that the Japanese like French first and foremost. So I think a lot of people go to France for bread training.

Yes. That's what I am observing, as well. And I find that very interesting. I love these little cultural quirks and interpretations of other cultures. How things are taken and shaped into something new. The only videos about German style bakeries I have seen, have always been German immigrants. I don't think I've ever seen a Japanese person learn from German bakers. Like you say it's always France. So interesting!
I love her setup. Simplicity is best. Her hard work is appreciated. Thank you for sharing. Look forward to watching more of your videos.

I never expected that in Japan they eat bread. I've never seen a restaurant serve bread but endless rice balls. They seem to feed the tourists with rice and hide the good breads in the mountains. Perfect well-baked breads remind me of the loaves made in the Mediterranean countries. Tiring work for a girl but she does it perfectly. Congratulations.

A medieval baker could time-travel to her place & just make bread like how he'd always done! I think i could retire at a place like her's & simply make bread 'til i grow old. I just love how she takes her time making bread all by hand, with barely minimal technology & without the pressure of making too many types of bread in a day. Next time put a curtain or some kind of cloth across the ceiling closer down to the concrete wall that way the heat will not rise up to the ceiling and the heat will stay below the concrete wall and heat the other room faster in the fermentation faster and you will keep the heat lower in the room where you need it in the winter time

Fermented raisins also are in Worcester sauce🎉 I began making bread with my paternal Grandmother at 10 years of age. Later my great Aunt (her sister) taught me various methods and types of bread. For home, I use a German bread machine. 🍞 that'd primarily be for sandwiches 🥪. In Japan, are you taxed for this business, need licensure, or also health department regulations? We do here in the States.😢

Thanks for sharing your valuable experience. You do not need a license to open a bakery in Japan. However, we do need to obtain permission from the public health center, and taxes will be charged based on income.

Another beautiful example of a Gueulard oven. A type of oven rarely seen outside of France. The only modern ones (ie. recently build) seem to be in Japan. I wonder who makes them in Japan.

Bakers who uses this type of oven made it by themselves as far as I know.
Those are expensive sort of breads. I make them at home on occassion, I'd like to try her version.
