    Looks amazing! But if I want it slightly firmer (so I can cut), do I just steam it for longer?

    Thanks, if you want it firmer , reduce the amount of water. Steaming longer won't make it firmer. You can refrigerate it and it will become firmer

    Hi must we wait for the gula melaka to cool down before the next step, I heard it will turn sour if add to the white mixture when hot?

    No need to cool down the Gula melaka. Have not experience any sourness when adding the flour mixture whole its hot.

    Can i use those desiccated coconut that sold in baking store?

    If you can't get freshly grated coconut then I guess that's the next best alternative. I would suggest that you steam the dessicated coconut to give it some moisture as they are very dry.

    You can try but I find it'll be too soft without lye water. You can search on KZread how to make your own lye water.

    Hi, thanks for your comment. I used an ice cream scoop to scoop the kueh ko swee into small bite size as it's still warm and slightly soft. After the kueh has cooled down completely then can I cut it with a knife or scissors.

    Why do you need it to be smooth? It will be coated with grated coconut after all.

    Without lye water the kueh will turn out soft but still acceptable to some. The taste will also be slightly different but like I said it depends on individual.
