Kuih kosui Gula Melaka 2019

Kuih Kosui
100g rice flour
25g potato starch
25g wheat starch
130g water
Mix till smooth
300g water
80g gula melaka (palm sugar)
40g brown sugar
2 pandan leaves (screw pine leaves)
Bring to a boil and remove pandan leaves
Cool syrup before adding to the flour
1/4 tsp air abu (sodium silicate or ash water)
Mix well and sieve mixture
Oil cups
For more flavour use extra virgin coconut oil

Steam for 5 minutes to warm up cups
Pour batter till the top
Steam for 20 minutes
1/2 grated coconut
Salt to taste
Steam for 10 minutes
Let completely cool before unmolding/removing from cups
Garnish with grated coconut

    Hi, I was curious about "potato starch". Is this the Western potato starch? I haven't seen this used before in this recipe.

    This potato starch is available around Malaysia. In fact this batch was bought in Kuching.
