In this video we bring to you Ang Ku Kueh, aka red tortoise cakes! They are shaped to look like tortoise shells and represent good fortune and blessings. A popular local snack here, we've decided to use this recipe for its sweet mung bean filling and soft chewy skin.
Our recipe consists of 2 colored variations, the original red and a pandan flavored green for an exciting contrast. You know that you have done it right when the dough is smooth and soft to fit perfectly into the mould. It's easy to make and ideal for a family/friend get-together.

50g glutinous rice flour for moulding
Ang ku kueh mould
Banana leaves (8cm by 8cm 42 pieces)
4 tbsp oil
Red Dough:
1/16 tsp bright red colour powder
50g wheat starch
35ml water
125ml hot boiling water
15g sugar
30g mashed orange sweet potato
125g glutinous rice flour
50ml water
30ml peanut oil
Pandan Dough:
50g wheat starch
35ml water
125ml coconut milk
15g sugar
30g mashed yellow sweet potato
125g glutinous rice flour
50ml water
30ml peanut oil
20g pandan leaves
Filling:
250g mung beans 180g sugar
110ml peanut oil
600ml water
2 pandan leaves (knotted)

    ang ku kueh!!! what can go wrong!... love them allday. UNLESS!, anyone in my house decides to put it in the fridge and it gets harden! especially the newly bought that are moist and chewy. erghhh!

    Yes you can! Though if you substitute peanut oil with cooking oil, the fragrance of peanut oil won't be there

    possible but it will change the texture, hence you might need to adjust the rest of the ingredients

    One year later, a reply from a stranger 😀 wheat starch is residu from wheat flour after you take the gluten. So wheat starch is gluten free, a little bit similiar with tapioca starch, or you can mix half corn starch and half tapioca starch
